My husband & I own a working cattle ranch in south Texas, although we don't eat our own beef we do enjoy our steaks! We have tried steaks in all parts of the country, I think we make the best here at home. It is a joint effort. The right type of beef, cooking time, and seasoning. I am a big comfort food person, so is my husband. He grew up here on the ranch, so he is used to meat and potatoes. I was brought up in town (less than 10,000 people), but my grandparents always had a garden and my mother helped in the canning process. So, we ate homemade jellies and always had fresh vegetables to eat. My grandparents parents were from Austria so the bread/dough dishes were plentiful. My father's parents background was more into hunting and fishing so, the introduction to the wonderful world of fried foods came at an early age.

My mother and my grandmothers OF COURSE! I think I was in my MamMaw's kitchen when I was a toddler (eating bread dough - I think) . Prune dumplings, koloches, fried bread dough (the list goes on). My grandmother Sparks couldn't boil water when she got married at 14, but she mastered the art of fixin' chicken n' dumplings, pinto beans, navy beans ( all loaded with pork), cornbread, fried catfish and every other type of fried meat you can think of, including fried bacon! My mother is a saint and she wanted us to learn all we could by hands on. Never raised her voice no matter how much of a mess we made! Everything she fixed was homemade. From hotcakes (pancakes) to waffles and makes the best buttermilk biscuits you can imagine. Oh and cornbread dressing - I starve myself for three days before Thanksgiving & Christmas so I can stuff myself with her wonderful dressing. Then my sister & I fight over who gets to take home the leftovers. I usually win. Just because I'm smarter than she is - she will beg to disagree. (ha)
