I have always loved to cook, but I am doing it more these days from a wheelchair. I used to love to cook spectacular dishes....I have even compiled my own cookbook that was featured in my local newspaper the week of Thanksgiving a few years back. Now I cook more one pot meals, simplified versions of life-long favorites...being in a wheelchair isn't a reason to not cook!

I learned to cook from my Mother. I don't think she ever used a recipe! I was unable to help around the house when I was growing up due to childhood Polio, so my Mama started teaching me how to help with the family meals. The first thing I learned to cook was rice. (Well, I AM from the South , and every self-respecting Southerner, should know how to cook a great pot of rice!)
I was cooking the whole family meal on weekends and in summer by the time I was 12. My parents owned a grocery store and Mama worked in the office. Our house was next door. I would plan menus, shop and cook. I thought it was all great fun!
When I got older I discovered my love of cake baking. However, now that I can't spend as much time in the kitchen, I mostly bake pound cakes....I am trying to simplify my life so that I can still do the things I love in spite of Post Polio Syndrome and using a wheelchair part time..

- 27 de Febrero de 2011Linda - we grow yucca at the farm. They are are very hardy plant and make a good barrier and interesting landscape addition, even if this time of year the deer nibble a bit at the spikey leaves (they are too fiberous for deer to destroy). But, since they grow bountifully from the roots, putting up new plants every year, they are also a great food source. We like to peel the root, much like a carrot or parsnip, and make chips out of them, frying them in hot corn oil. They are sweet and make a simply outstanding substitute for a potato chip, which, of course, makes for a great garnish. So slice them on a mandoline, or cut them thin and fry and enjoy them! best wishes - Amos

- 23 de Febrero de 2011Hi, Linda! I'm here, but I can't figure out how to "friend" you. Maybe someone can tell me how to do it. I do find this site a little hard to understand, and find the things I want. Don't know if it is me or what. Hope it gets better with practice, if my energy stays up enough (dang that Polio Polio fatigue!). I am putting my family recipes on a page, too,,,not sure how to share it with you and the gang, Yours is coming along nicely...Jann
- 22 de Febrero de 2011Great news, Linda! I will do as you suggest and am following your new group and I think most of us have recipes that you can use. If you get any recipe that you feel is in need of modification, improvement or deletion, do the right thing for your group. I suggest you send a message to Frank Fariello. He has a number of groups - all quite excellent, in my opinion - but he has one group for authentic Italian recipes that he wants/trys to strictly monitor to prevent "un-authentic" or seriously corrupted recipes from creeping into his collection. Frank may be able to better advise you regarding how you can keep an eye on any contributions made to your DSC group. When you have time, please review all my recipes and determine which ones might be good for you and I will transfer those to your group, which may help build your following. And try to get a decent photo of everything you do, both for visual interest by viewers and to 'sweeten' your site. Let me know how it goes & best wishes! - Amos
