I grew up in rural Australia where my mother nurtured my instincts for cooking by encouraging me to go to culinary school, saying, “No matter where you go, people always need to eat.” With a degree in hotel catering I began working as a chef with Melbourne’s then top catering company. This was 1981 and Melbourne was fast developing a reputation for exciting and innovative food. Indeed, a trade in food and cooking meant I could work wherever I went. Coupling my love of skiing with cooking, I decided to follow the winters cooking in ski lodges in Australia and a chalet in the French Alps, with a pit stop in London running the kitchen of a small private hotel. After 8 years, I stepped away from cooking professionally but never gave it up entirely. Now living in Boulder, Colorado, I've watched the area grow from a steak-or-salmon-with-baked-potato-town in the late 80’s to a Whole Foods Market lifestyle town. Today, my cooking style is fresh, easy, simple, healthy, and every meal I make is full of color. My philosophy: As long as you’re eating a rainbow you’re covering your nutritional needs while creating an eye-appealing meal that also tastes great.
