%20and%20we%20ate%20lunch%20(pics%20below)%20under%20the%20shade%20of%20a%20beautiful%20maple%20tree%20in%20the%20backyard%20of%20a%20home%20I'll%20be%20care-taking%20for%20the%20next%20month.%3C/p%3E%3Cp%3ETracy,%20the%20home%20owner,%20is%20a%20member%20of%20the%20group,%20Boulder%20Culinary%20Gardeners,%20as%20is%20chef,%20Eric%20Skokan.%20BCG%20members%20are%20an%20egalitarian%20lot,%20sharing%20their%20wisdom%20with%20other%20local%20farmers%20and%20gardeners%20striving%20for%20organic,%20healthy%20and%20sustainable%20gardens.%3C/p%3E%3Cp%3EI%20don't%20have%20a%20garden,%20but%20I%20love%20the%20opportunity%20to%20care%20for%20the%20gardens%20of%20others,%20especially%20when%20I%20can%20pick,%20prepare%20and%20eat%20directly%20from%20their%20backyards!%3C/p%3E%3Cp%3EThis%20summer,%20for%20the%20second%20summer%20in%20a%20row,%20I%20have%20the%20good%20fortune%20of%20caring%20for%20the%20properties,%20vegetable%20gardens,%20and%20egg-laying%20hens%20of%20two%20BCG%20members%20--%20Tracy%20and%20Barbara.%3C/p%3E%3Cp%3EFollow%20this%20link%20to%20see%20posts%20featuring%20Barbara's%20urban%20farm,%20where%20I%20was%20last%20August,%20watering,%20picking,%20cooking%20and%20eating%20extraordinary%20produce%20and%20fresh%20eggs,%20and%20where%20I'll%20be%20again%20this%20August.%3C/p%3E%3Cp%3EBut%20back%20to%20yesterday%20--%20as%20you%20can%20see%20in%20the%20top%20pictures,%20Tracy%20has%20a%20wonderful%20selection%20of%20lettuces%20in%20her%20garden.%3C/p%3E%3Cp%3EFor%20lunch,%20I%20picked%20wild%20arugula,%20spinach,%20Bordeaux%20spinach,%20butter%20lettuce,%20purple-leafed%20lettuce,%20and%20chives%20with%20flower%20blossoms%20intact.%3C/p%3E%3Cp%3EAll%20the%20leaves%20were%20young%20and%20delicate%20and%20so%20I%20simply%20washed%20them,%20putting%20them%20through%20the%20salad%20spinner,%20and%20then%20I%20served%20them%20plain%20on%20a%20platter%20with%20a%20few%20of%20the%20yellow%20rapini%20flowers%20leftover%20from%20the%20bag%20of%20greens%20I%20bought%20last%20weekend%20at%20Eric's%20Black%20Cat%20Farm%20stand.%3C/p%3E%3Cp%3ESimplicity%20is%20the%20key%20when%20you%20have%20access%20to%20tender,%20baby%20salad%20greens.%3C/p%3E%3Cp%3EI%20served%20the%20platter%20with%20sides%20of%20oils,%20vinegar,%20and%20lime%20wedges.%20(On%20hand,%20I%20had%20olive%20and%20walnut%20oil,%20though%20hazelnut%20and%20avocado%20oil%20would%20be%20suitable%20accompaniments%20too.)%20That%20way%20my%20guests%20could%20choose%20whether%20they%20wanted%20to%20add%20additional%20flavor%20to%20their%20salad%20greens.%3C/p%3E%3Cp%3EWith%20the%20platter%20of%20garden-fresh%20salad%20greens,%20I%20also%20served%20a%20variation%20on%20traditional%20Waldorf%20Salad%20using%20ingredients%20I%20had%20on%20hand:%3C/p%3E%3Cp%3Ehalf%20a%20chicken%20breast,%3C/p%3E%3Cp%3Esome%20celery,%3C/p%3E%3Cp%3Ebottled%20artichoke%20hearts%20in%20olive%20oil,%3C/p%3E%3Cp%3Eapple,%3C/p%3E%3Cp%3Ewalnuts,%3C/p%3E%3Cp%3Echives,%3C/p%3E%3Cp%3Eand%20I%20bound%20the%20salad%20with%20a%20dob%20of%20sour%20cream%20and%20lemon%20juice.%3C/p%3E%3Cp%3EThe%20other%20platter%20is%20something%20I%20made%20up,%20again%20with%20ingredients%20on%20hand.%20I%20poached%20a%20fillet%20of%20mahi%20mahi%20on%20a%20bed%20of%20leeks%20and%20celery%20and%20some%20leftover%20chervil%20from%20my%20purchase%20last%20weekend%20at%20Eric's%20farm%20stand.%3C/p%3E%3Cp%3EPoaching%20the%20fish%20in%20a%20pan%20(lid%20on)%20with%20half%20a%20cup%20of%20water%20and%20the%20juice%20of%20one%20lemon,%20meant%20it%20was%20infused%20with%20the%20delicate%20anise-flavor%20of%20the%20chervil,%20and%20the%20leeks%20and%20celery.%3C/p%3E%3Cp%3EWith%20the%20heat%20on%20low,%20the%20fish%20cooked%20in%20less%20than%2010%20mins,%20after%20which%20I%20let%20it%20sit%20to%20cool%20(lid%20off).%20Meanwhile%20I%20prepared%20an%20avocado,%20oil%20mayonnaise:%3C/p%3E%3Cp%3EIn%20a%20blender,%20whiz%20the%20yolks,%20garlic,%20lemon%20and%20or%20vinegar,%20salt%20and%20pepper.%20Very%20slowly,%20drizzle%20in%20the%20oil,%20bit%20by%20bit,%20so%20that%20the%20yolks%20and%20oil%20emulsify%20or%20thicken.%3C/p%3E%3Cp%3EThe%20key%20is%20patience%20when%20making%20oil%20mayonnaise.%20It's%20too%20easy%20to%20pour%20the%20oil%20quickly,which%20can%20cause%20the%20mayonnaise%20to%20break%20or%20fail%20to%20thicken.%3C/p%3E%3Cp%3EFinally,%20add%20the%20avocado,%20and%20then%20a%20splash%20of%20water%20--%20this%20will%20give%20the%20mayonnaise%20pouring%20consistency.%3C/p%3E%3Cp%3EAs%20you%20can%20see%20in%20the%20pic%20above,%20I%20served%20the%20sliced%20mahi%20mahi%20on%20a%20platter%20with%20the%20poached%20vegetables%20under%20the%20fish.%20I%20then%20poured%20the%20avocado%20mayonnaise%20over%20the%20fish,%20topping%20it%20with%20the%20lavender-colored%20chive%20blossoms,%20and%20lastly,%20I%20decorated%20the%20edge%20of%20the%20plate%20with%20red%20and%20green%20Bordeaux%20spinach%20leaves.%3C/p%3E%3Cp%3EThe%20two%20friends,%20who%20shared%20the%20above%20lunch%20with%20me,%20were%20happy%20to%20volunteer%20that%20it%20was%20a%20sumptuous%20but%20simple%20feast!%3C/p%3E%3Cp%3EIf%20you're%20hankering%20for%20something%20other%20than%20a%20barbecue%20this%20long%20weekend,%20try%20your%20hand%20at%20the%20above%20outdoor-lunch%20menu.%20If%20you%20don't%20have%20a%20veggie%20garden,%20it%20might%20mean%20shopping%20at%20your%20local%20farmer's%20market%20for%20interesting,%20just-picked%20salad%20greens,%20but%20the%20end%20result%20is%20definitely%20worth%20it.%3C/p%3E){kind=link}
