I love cookin' hawg for family, friends & sometimes competions.
I once cooked wirth a team on the Memphis in May circuit that specialized in whole hog.
Now, I barely have time for my on home smokin' & cooking. So, I have had to take things down to whole or sliced pork loin, chops, ribs, & butts.
Also, I like to grill steaks, but I not quite as confindent grilling as I am smokin" and slow roastin'. Sirloins are my preferred cut.
I like too cook-out year round. During the holidays I like to smoke turkey & chicken or family & friends.
Outdoors, I cook with charcoal (No gas, please!)
I smoke indirect with charcoal & hickcory with the grills over water pans.
For grilling I currnetly use a Kingsford model.
Indoors, I use our electriv oven & a chip smokin' box.
Other dishes I love to make are chili, hot wings & spaghetti sauce.
I don't have a lot of time to make my own sauces & marinades. So, I like to use Johnny Fleemans marinades, Tabasco Sauce and Mauls BBQ Sauce for my meat dishes.
