Hi everyone,
My name is Pasquale Frola. I’m a Chef working at the date as Chef de Cuisine in NYC for Gradisca a nice Italian Restaurant in the Village. I define myself as a chef with motivational skills, leadership, personality and a passion for the industry, always focusing on high quality, use of local ingredients and simple preparations .
I’m Italian, born and raised in Naples Italy, married with a wonderful American woman, and I have lived in NYC for almost four years now . My continuous will to improve and my aim to perfection always stimulates me to find new sources to let me achieve my professional goals.
Before NYC I have worked in Italy, France, Germany, and England. I have also worked world wide with Silversea Cruises, a top luxury cruise company, reaching a grade of experience and skills which have given me the opportunity to “swim” in different cooking pots.
I'm glad to be here and hope to find a lot of friends and share my passion and interest Cooking, cooking, cooking!!!!

My cooking influences are a blend of Italian, Mediterranean and European cuisine, but my real love is a very good Italian Cuisine simple ingredients always very fresh and very very well cooked yummy...
I'm a lover of things that are home made, sometimes the secrets of our grandmothers, mothers, and also, of discovery and practice.
The discovery consists in finding garden products, meats, fishes, and poultry in daily markets and trying to give, with what you found, the best experience you can give to your table.
The practice is the correct use and pairing of the ingredients, and among them trying to have the best flavor obtainable.
The grandma’s secret is to give to the table the most enjoyable experience at the lowest cost possible. That’s not to be stingy, but because normally in Italy, where the food purchasing is all on the Family Women, the grandmas are the ones which try to get as much of a discount as possible from the supplier. They choose what is seasonal and fresh on the market. Even today, with the opening of the shopping centers and malls, the real grandmas still go to buy the daily needs from their favorite local food or grocery store… the one where they know the owner! The moment of the check trigger the “fight”, which is a rule that every vendor and grandma knows very well because it has been going on for years. At the end everybody is happy because grandma thinks she has obtained the best price she could and the vendor knows that he was cheating on the weight of the parmesan!

Like you, I have been influenced by mother and Italian relatives, all of whom were born in Italy. I prepare all types of foods, but my heart is in Italian foods, always using fresh goods.
