I love baking and canning. I've been doing this since I could reach the stove. Dislike the fact that people confuse Cajan and Creole food and think that everything from this region is hot with peppery seasonings.
I have always made things from scratch and dislike the fact that our food source has been poluted with additives, chemicals and hormones. Find a challange in cooking for my Grandson who is allergic to almost everything including dyes and dairy and all chemicals. In the past few years I have learned to read, really read food lables not only for his sake but mine. I am sure that some of these additives cause many health related problems.

Alberta, my Nanny and my Grandmother, Dear, who raised 11 children and had to be a thrifty cook. She wouldn't use canned foods and said that tap water was poision. She had something there I think. She stored her foods in glass for safty sake.
Alberta was a great creole cook and fond of letting us experiment with different things in the kitchen.
