I like to cook for people who like to eat large portions of rich flavorful comforting food from salad to dessert. Butter, bacon fat, heavy cream and full fat dairy are NEVER to be substituted with lesser quality (low/non-fat) dairy products. Wine and garlic are necessary in just about everything except maybe strawberry shortcake.
Comfort food always wins out.
1 Flavor 2 Comfort factor 3 Texture 4 Health. Food prepared in that order is always a winner.
I like to make as much from scratch as possible, including mayonnaise from an old recipe The Wesson Oil Co put out in the 1930s.
I look at all recipes as blank canvasses and tweak them to my tastes. My partner comes from Mazatlan so a great deal of what we eat is Mexican/Latin and we both like it spicy.

My Grandmother and Mother were great cooks. I also learn from paying attention to Grandmothers and Great Grandmothers when it comes to preparing food.
