I can't say that I know Cajun cuisine very well, but I once had a delicious shrimp dish called "Cajun popcorn". Loved it.

Cajun popcorn as in popcorn flavored with Cajun spice? Or, are you talking about Popcorn Shrimp?

I am very excited about this group. Recently I learned how to make a dark roux in the oven. I never could do that dark roux thing, it always seemed to burn. I got a dutch oven for Christmas. I want to make Cajun Black Pot Turkey. Frank Davis is the chef and I got the recipe from Louisianna Cooking Magazine. I won a recipe contest from the Louisianna Sweet Potato Commision. The recipe is called Critter Fritter. I will post it when I get a chance. I look forward to all kinds of yummy recipes!

Congratulations on your critter fritters! Awesome job! I saw your recipe in Louisiana Cookin' Magazine--which is my favorite cooking mag.
