%20Berry%20Burst%20Muffins%3C/p%3E%3Cp%3EIt's%20the%20last%20day%20of%20Canada%20Day%20weekend.%20%20I%20wish%20I%20could%20say%20its%20been%20a%20sunshine-y%20weekend%20filled%20with%20BBQs%20and%20beers,%20but%20really%20its%20been%20one%20rainy%20day%20after%20another%20-%20and%20more%20in%20the%20forecast.%20%20I%20feel%20particularly%20bad%20for%20husband,%20because%20he%20downright%20loves%20Canada%20Day!%20%20Even%20with%20the%20rain%20pouring%20down%20he%20put%20not%20one,%20not%20two,%20but%20three%20Canadian%20flags%20up%20in%20your%20front%20yard%20:)%20%20So%20to%20raise%20our%20spirits%20I%20headed%20to%20the%20kitchen%20today%20armed%20with%20some%20of%20husband's%20favourite%20flavours%20-%20berry%20and%20maple.%3C/p%3E%3Cp%3EThese%20cranberry%20muffins%20have%20a%20great%20texture%20and%20a%20good%20play%20on%20sweet%20and%20sour.%20%20Although%20husband%20thinks%20the%20muffin%20could%20have%20been%20a%20little%20sweeter,%20it%20complimented%20the%20tart%20cranberries%20nicely.%3C/p%3E%3Cp%3EThe%20crunchy%20maple%20topping%20wasn't%20as%20good%20as%20I%20had%20hoped.%20%20It%20kind%20of%20crumbles%20off%20as%20you%20are%20eating%20the%20muffin.%20%20So%20two%20options:%201)%20push%20the%20topping%20down%20into%20the%20batter%20before%20baking%20or%202)%20skip%20the%20topping%20and%20just%20sprinkle%20the%20batter%20with%20a%20hefty%20serving%20of%20maple%20sugar%20before%20baking.%3C/p%3E%3Cp%3EThe%20berry%20filling%20is%20delicious,%20but%20you%20can%20easily%20double%20the%20recipe%20and%20add%20more%20to%20the%20insides%20of%20your%20muffins%20if%20you%20want.%3C/p%3E%3Cp%3ESo%20give%20'em%20a%20go%20and%20let%20me%20know%20if%20they%20brighten%20up%20your%20rainy%20day%20:)%3C/p%3E%3Cp%3EBerry%20Filling%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ESteps%3C/p%3E%3Cp%3E-Preheat%20oven%20to%20400F.%20%20Line%20a%20muffin%20tray%20with%2012%20paper%20liners.%3C/p%3E%3Cp%3E-In%20a%20large%20bowl%20stir%20together%20flour,%20baking%20powder,%20baking%20soda,%20and%20salt.%20%20Add%20cranberries%20and%20stir%20to%20coat%20(this%20will%20keep%20them%20from%20sinking%20to%20the%20bottom%20of%20your%20muffins).%3C/p%3E%3Cp%3E-In%20a%20small%20bowl%20mix%20together%20eggs,%20sugar,%20yogurt,%20oil,%20and%20vanilla.%20%20Add%20to%20dry%20ingredients,%20stirring%20just%20until%20combined.%3C/p%3E%3Cp%3E-Divide%20batter%20between%2012%20lined%20muffin%20cups.%20%20Top%20each%20muffin%20with%20maple%20topping.%3C/p%3E%3Cp%3E-Bake%20for%2015-20%20minutes,%20or%20until%20a%20toothpick%20comes%20out%20clean%20(mine%20took%2018%20minutes).%3C/p%3E%3Cp%3E-Let%20cool%20for%2010%20minutes%20on%20wire%20rack%20still%20in%20the%20tray.%20%20Remove%20from%20tray%20and%20place%20on%20rack.%3C/p%3E%3Cp%3E-Insert%20the%20nozzle%20of%20the%20squirt%20bottle%20into%20top%20of%20each%20muffin%20(as%20far%20in%20as%20it%20will%20go)%20and%20squeeze%20until%20berry%20filling%20starts%20to%20ooze%20out.%3C/p%3E%3Cp%3E-Let%20cool%20completely%20on%20wire%20rack.%3C/p%3E){kind=link}
