%20I%20brined%20it%20overnight%20(about%2014%20hours)and%20then%20rinsed%20it%20off,%20patted%20it%20dry,%20and%20rubbed%20it%20with%20butter%20and%20Turkey%20Rub%20(even%20underneath%20the%20skin.)%20I%20cooked%20it%20at%20325%20F%20for%20about%203%201/2%20hours,%20and%20each%20time%20I%20basted%20it,%20I%20glazed%20it%20with%20maple%20syrup%20as%20well.%20This%20made%20the%20gravy%20sooooooooooo%20delicious!!!(Sorry,%20that's%20a%20terrible%20picture.%20It%20fell%20apart%20when%20we%20lifted%20it%20out%20of%20the%20roaster,%20plus%20this%20is%20only%20my%20second%20attempt%20at%20cooking%20a%20turkey,%20so%20I%20haven't%20mastered%20the%20art%20of%20a%20beautiful%20looking%20bird%20yet.%20But%20it%20sure%20tasted%20good!)%3C/p%3E%3Cp%3EI%20also%20made%20Cranberry%20Apple%20Stuffing,%20with%20some%20slight%20modifications%20to%20the%20recipe.%20Instead%20of%20bread%20crumbs%20I%20used%20cubes%20of%20french%20bread%20(from%20our%20wine%20&%20cheese%20the%20night%20before.)%20I%20also%20used%20less%20Cherries%20&%20Berries,%20more%20apples%20and%20onion,%20and%20I%20used%20Sage%20&%20Apple%20Stuffing%20Seasoning.%20I%20made%20it%20the%20day%20before%20and%20tossed%20it%20into%20the%20oven%20in%20tinfoil%20packets%20for%20about%20an%20hour%20while%20the%20turkey%20was%20cooking.%20It%20was%20delicious,%20although%20I%20must%20admit,%20I%20do%20still%20love%20Stove%20Top%20Stuffing!%3C/p%3E%3Cp%3EOne%20of%20my%20favourite%20dishes%20was%20the%20Maple%20Roasted%20Root%20Vegetables.%20These%20were%20amazing.%20When%20the%20turkey%20was%20cooked,%20we%20wrapped%20it%20in%20tinfoil%20to%20let%20it%20rest,%20so%20we%20just%20poured%20the%20gravy%20drippings%20into%20another%20container%20and%20used%20the%20roaster%20to%20make%20the%20veggies%20(because%20this%20recipe%20makes%20a%20huge%20batch!)%20I%20followed%20the%20directions%20exactly%20and%20they%20turned%20out%20perfectly.%3C/p%3E%3Cp%3EWe%20also%20had%20some%20garlicy%20mashed%20potatoes%20that%20I%20forgot%20to%20take%20a%20picture%20of.%20I%20think%20we%20all%20know%20what%20they%20look%20like.%20Potatoes,%20butter,%20milk,%20and%20(perhaps%20a%20little%20too%20much)%20Garlic%20Potato%20Topper%20all%20whipped%20together.%3C/p%3E%3Cp%3EBut%20the%20highlight%20of%20the%20meal%20was%20my%20sister's%20Pumpkin%20Cheesecake,%20topped%20with%20Crystallized%20Ginger.%3C/p%3E%3Cp%3EIt%20was%20as%20good%20as%20it%20looks...%20huge,%20tall%20slices%20of%20rich,%20creamy%20cheesecake,%20topped%20with%20real%20whipped%20cream.%20She%20also%20made%20Lemon%20Meringue%20Pie%20from%20scratch,%20but%20I%20didn't%20take%20a%20picture%20of%20that%20either.%20It%20was%20just%20as%20fabulous%20-%20my%20sister%20is%20an%20amazing%20baker!%3C/p%3E%3Cp%3ENow%20if%20anyone%20is%20wondering%20what%20to%20do%20with%20their%20turkey%20leftovers,%20here%20are%20my%20suggestions%20(and%20if%20I%20don't%20blog%20this%20week,%20it's%20because%20I'm%20eating%20one%20of%20these%20three%20things%20and%20the%20recipes%20are%20already%20on%20here.)%3C/p%3E%3Cp%3ETV%20Dinners%20-%20Get%20some%20pie%20plates%20and%20serve%20up%20a%20portion%20of%20all%20your%20leftovers%20onto%20each%20plate.%20Pour%20some%20gravy%20overtop,%20and%20wrap%20in%20tinfoil.%20These%20are%20handy%20to%20keep%20in%20the%20freezer%20and%20pull%20out%20on%20cold%20winter%20nights.%20They%20do%20take%20a%20while%20to%20heat%20up%20in%20the%20oven%20(maybe%20an%20hour?)%20but%20it's%20nice%20to%20have%20a%20turkey%20meal%20sometimes%20without%20all%20the%20hassle.%3C/p%3E%3Cp%3ECoq%20au%20vin%20-%20Instead%20of%20cooking%20the%20chicken,%20just%20add%20leftover%20turkey%20instead.%20If%20you%20boil%20the%20turkey%20carcass%20to%20make%20broth,%20save%20some%20to%20use%20in%20this%20recipe.%3C/p%3E%3Cp%3ETurkey%20Enchiladas%20-%20Another%20favourite%20recipe%20I%20haven't%20made%20in%20ages,%20and%20it's%20also%20great%20for%20freezer%20meals%20(if%20you%20don't%20want%20to%20eat%20turkey%20all%20week.)%3C/p%3E%3Cp%3EI%20hope%20you%20all%20had%20a%20wonderful%20Thanksgiving!!!%20Enjoy%20your%20leftovers!%3C/p%3E){kind=link}
