Receta Adobong Pusit with Gata
Ingredientes
- 2 tbsp oil
- 1 pc. onion, sliced
- 4 cloves garlic, sliced
- 1 cup coconut milk
- 1/2 cup coconut cream
- 3 tbsps cane vinegar
- 1⁄2 kg small squid, whole, cleaned
- 1/2 cup steamed eggplant slices
- salt and pepper, to taste
Direcciones
- Combine all ingredients in a deep boiling pot except coconut cream.
- Bring it to a boil then lower the heat. Let it simmer until squid is half cooked.
- Add the steamed eggplant on top and let it boil again.
- Add the coconut cream, simmer for a minute or two then turn heat off.
- Let the dish rest for a while as the eggplant absorbs the cream.
- Serve with steamed rice.
