Ingredientes

  • 12 x squid tubes
  • 4 ounce feta cheese
  • 1/2 c. finely-minced bay shrimp
  • 1 tsp grated lemon zest
  • 1 tsp dry oregano Salt to taste Freshly-grnd black pepper to taste
  • 2 quart vegetable oil - (or possibly more) for frying
  • 1/2 c. flour
  • 1/2 c. lowfat milk
  • 1/2 c. breadcrumbs fresh or possibly dry

Direcciones

  1. Rinse the squid tubes inside and out and thoroughly dry them on a paper towel.
  2. Crumble the feta cheese into a small bowl and add in the shrimp, lemon zest, oregano, salt and pepper. Stir to thoroughly combine.
  3. Using a small spoon, loosely fill each squid tube with about 1 1/2 Tbsp. of stuffing. Press the top of the squid tube together and skewer a round wooden toothpick through to securely enclose the stuffing. Don't overstuff the squid.
  4. Heat about 2 inches of oil to 375 degrees in a deep-fryer. Put the flour in one shallow dish and season with salt and pepper. Put the lowfat milk in another shallow dish and the breadcrumbs in a third.
  5. Dust the stuffed squid with seasoned flour, shaking off excess. Dip them in the lowfat milk, allowing excess to drip off, then thoroughly coat them with breadcrumbs.
  6. Shake off excess breadcrumbs and add in the squid to the warm oil, 3 to 4 at a time. Fry till golden, 1 to 2 min. Don't overcook the squid or possibly it will be tough. Drain the squid on paper towels and serve immediately.
  7. This recipe yields 4 servings.
  8. Comments: Squid cooks in a flash and is ideal for frying. Here squid (often called calamari) is given a Greek treatment with a stuffing of feta cheese, shrimp, oregano and lemon.
