%20and%20I%20really%20didn't%20want%20to%20spend%20the%20money%20on%20already%20ground%20blanched%20ones.....so%20I%20did%20a%20little%20research%20and%20found%20out%20how%20to%20do%20it%20on%20my%20own.%3C/p%3E%3Cp%3EHow%20to%20blanch%20almonds:%20bring%20some%20water%20to%20a%20boil%20(enough%20to%20cover%20the%20amount%20of%20almonds%20you're%20going%20to%20blanche),%20remove%20the%20pan%20from%20the%20heat,%20toss%20in%20the%20almonds%20and%20let%20them%20sit%20there%20for%20a%20bit....until%20the%20water%20is%20cool%20enough%20to%20be%20able%20to%20place%20your%20hand%20in%20it%20without%20burning%20yourself.%20Then%20gently%20squeeze%20one%20almond%20at%20a%20time%20between%20your%20thumb%20and%20forefinger....causing%20the%20almond%20to%20simply%20slip%20right%20out%20of%20it's%20own%20skin.%20Lay%20them%20out%20to%20dry%20on%20a%20towel.%3C/p%3E%3Cp%3EOnce%20dry...the%20almonds%20are%20ready%20to%20grind.%3C/p%3E%3Cp%3EHow%20to%20grind%20almonds:%20Place%201%20cup%20of%20almonds%20at%20a%20time%20into%20a%20food%20processor%20along%20with%20a%20few%20tablespoons%20of%20sugar%20and%20grind%20away.%20If%20you're%20using%20a%20blender,%20grind%201/2%20cup%20at%20a%20time.%20The%20sugar%20is%20necessary%20when%20grinding%20nuts.%20It%20prevents%20the%20ground%20nuts%20from%20becoming%20oily%20and%20lumpy%20which%20would%20make%20it%20near%20impossible%20to%20add%20to%20other%20dry%20ingredients.%20(at%20least%20that's%20what%20Julia%20Child%20says...and%20I%20will%20take%20her%20word%20for%20it).%3C/p%3E%3Cp%3EIf%20you%20don't%20want%20to%20go%20through%20all%20of%20that...then%20by%20all%20means....buy%20yourself%20a%20bag,%20already%20done.%20I'm%20too%20much%20of%20a%20cheapskate.%3C/p%3E%3Cp%3EAlmond%20Crisps%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350'.%20Line%20your%20cookie%20sheet%20with%20parchment%20paper%20or%20grease%20it.%20You%20will%20be%20baking%20only%204%20crisps%20at%20a%20time.%20They%20need%20lots%20of%20room%20to%20spread%20(hey!!%20I%20resemble%20that%20remark!!).%20Plus...when%20it%20comes%20time%20to%20%22roll%22%20them....they'll%20cool%20off%20too%20much%20by%20the%20time%20you%20get%20to%20the%20last%20one%20if%20you're%20working%20with%20more%20than%204%20at%20a%20time.%20(That'll%20make%20sense%20in%20a%20minute)%3C/p%3E%3Cp%3ECombine%20all%20of%20the%20ingredients%20into%20a%20nice%20big%2010%22%20skillet.%20Cook%20over%20a%20low%20heat,%20stirring%20constantly%20until%20the%20butter%20has%20completely%20melted%20and%20the%20mixture%20is%20well%20combined.%20It'll%20kinda%20resemble%20a%20grainy%20type%20gravy.%3C/p%3E%3Cp%3ETurn%20the%20heat%20down%20to%20very%20low,%20to%20keep%20your%20mixture%20warm%20(stir%20occasionally)%20.%20Drop%20mixture%20by%20heaping%20tablespoonfuls%20onto%20the%20prepared%20baking%20sheet....4%20cookies...at%20least%202%20inches%20apart.%20More%20if%20you%20have%20room....I%20think%20I%20had%204%22%20in%20between%20the%20little%20blobs.%3C/p%3E%3Cp%3EThe%20book%20says%20to%20bake%20for%205%20minutes.%20That%20was%20not%20the%20case%20for%20me....at%20all.%20I%20don't%20know%20if%20my%20%22heaping%20tablespoonfuls%22%20were%20more%20than%20theirs....but%20I%20ended%20up%20cooking%20mine%20for%208%20-%2010%20minutes.%20Keep%20an%20eye%20on%20them.%20They're%20done%20when%20they're%20nice%20and%20golden%20brown.%3C/p%3E%3Cp%3ELet%20them%20cool%20for%20just%20a%20second!%20Gently%20loosen%20the%20cookie%20with%20a%20spatula%20and%20turn%20it%20over.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20the%20bottoms%20are%20nice%20and%20smooth.%20Quickly%20roll%20each%20one%20around%20the%20handle%20of%20a%20wooden%20spoon.%3C/p%3E%3Cp%3EPlace%20on%20a%20rack%20and%20allow%20to%20%20cool%20completely.%3C/p%3E%3Cp%3EHere%20are%20a%20few%20hints%20and%20tips.%20I%20found%20that%20it%20worked%20best%20when%20I%20did%20one%20cookie%20at%20a%20time....flip,%20roll....then%20moved%20on%20to%20next.%20What%20this%20did%20was%20allow%20the%20other%20cookies%20to%20remain%20warm%20on%20the%20sheet.%20Once%20the%20cookie%20cools,%20it%20becomes%20too%20delicate%20and%20crispy%20to%20roll.%20But!!!%20If%20a%20cookie%20does%20become%20too%20firm%20to%20roll%20just%20stick%20it%20back%20in%20the%20oven%20for%20a%20minute%20until%20it%20softens%20up,%20then%20proceed.%3C/p%3E%3Cp%3EThey're%20fun,%20delicious%20and%20so%20pretty!%3C/p%3E%3Cp%3EI'm%20definitely%20adding%20this%20recipe%20to%20my%20yearly%20Christmas%20Cookie%20baking%20list.%20Here%20are%20my%20other%20favorites%20that%20have%20become%20a%20tradition%20in%20my%20household:%3C/p%3E%3Cp%3EGinger%20Cookies:%20Soft,%20chewy,%20spicy%20and%20very%20addictive.%20Perfect%20with%20a%20cup%20of%20tea.%20If%20you%20want%20to%20make%20Gingerbread%20Man%20Cookies....just%20add%20an%20additional%201/4%20cup%20of%20flour%20to%20recipe.%20I%20haven't%20tried%20it%20yet%20so%20I%20can't%20guarantee%20the%20results.%3C/p%3E%3Cp%3EEggnog%20Kringla:%20Soft,%20light%20and%20delicately%20sweet%20with%20just%20a%20hint%20of%20eggnog%20flavor.%3C/p%3E%3Cp%3ELinzer%20Sandwich%20Cookies:%20These%20are%20probably%20the%20most%20festive%20Christmas%20Cookie%20I%20bake....buttery%20and%20nutty%20and%20are%20sure%20to%20impress%20your%20guests.%3C/p%3E%3Cp%3EMerry%20Christmas%20and%20Happy%20Holidays%3C/p%3E){kind=link}
