  1. Boil sweet potatoes in their jackets till tender, about 25 min. Let cold, then peel and cut intoslices 1 1/2-inch thick. In a large skillet heat butter. Stir in brown sugar and water and cook onmedium heat about 5 min. Reduce heat and add in sweet potatoes to skillet.
  2. Cook gently; tossinglightly till sweet potatoes are glazed. Sprinkle with coconut before serving.
  3. Note: Canned yams can be used in place of sweet potatoes.
