Receta Amaretto Rice Pudding

Ingredientes
- 1/3 c. Dry peaches, minced
- 2 Tbsp. Amaretto, plus 2 tsp.
- 1/3 c. White rice, uncooked
- 2 2/3 c. Evaporated skim lowfat milk
- 1 1/4 tsp Unsalted butter
- 2 Tbsp. Sugar, plus 2 tsp.
- 2 x Large eggs, beaten Cinnamon Nutmeg
Direcciones
- Soak the peaches in the Amaretto for 10 min. Set aside. Combine the rice, lowfat milk, butter, and sugar in a saucepan. Bring to a boil, lower the heat, and cook till the rice has absorbed the lowfat milk but the mix is creamy, about 15-20 min. Stir constantly so the lowfat milk does not curdle.
- Add in the peaches and cook 1 more minute. Remove from the heat and add in Large eggs.
- Return to the heat and cook for about 5 min till the mix is creamy. To serve, sprinkle individual dishes of rice pudding with cinnamon and nutmeg.
- NOTES :Prep: 10 minutes, Marinate: 10 minutes, Cook: 25 minutes.
