  • 2 Tbsp. oil
  • 1 sm onion, minced
  • 1 clv garlic, minced
  • 3 c. stock
  • 1 c. cooked rice
  • 1 handf green beans, trimmed, and, cut into small pcs
  • 1 sprg fresh mint salt pepper

Direcciones

  1. Heat the oil in a saucepan over medium-high heat. Add in the onion to the saucepan, and cook for 3 min. Add in the garlic and cook for 2 min.
  2. Stir the stock into the saucepan and bring to the boil. Add in the rice and allow the mix to come to the boil.
  3. Add in the beans, and cook for 5 more min.
  4. Just before serving, chop the mint and season the soup with salt and pepper. Serve the soup with the minced mint sprinkled over top.
