%3C/p%3E%3Cp%3EFor%20most%20of%20us,%20pizza%20means%20just%20one%20thing:%20a%20round%20disk%20of%20dough%20topped%20with%20tomato,%20mozzarella%20and%20other%20goodies%20and%20baked%20in%20a%20hot%20oven.%20But%20the%20word%20'pizza'%20can%20also%20refer%20to%20a%20sweet%20pie,%20typically%20made%20with%20ricotta%20and%20eggs,%20flavored%20with%20sugar%20and%20other%20things,%20called%20pizza%20dolce%20di%20ricotta.%3C/p%3E%3Cp%3EAngelina%20made%20a%20simple,%20crustless%20version%20that%20she%20simply%20called%20pizza%20dolce,%20or%20'sweet%20pizza'.%20And%20while%20her%20exact%20recipe%20seems%20to%20have%20been%20lost,%20I've%20been%20able%20to%20recapture%20the%20taste%20of%20her%20dish%20through%20some%20trial%20and%20error.%20Here%20the%20basic%20recipe:%3C/p%3E%3Cp%3EIngredients%20(for%20a%20small%20pie%20to%20serve%204-6%20people)%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EMix%20all%20the%20ingredients%20together%20until%20they%20form%20a%20smooth%20and%20uniform%20whole.%20Pour%20into%20a%20greased%20pie%20pan%20and%20bake%20at%20180%C2%B0C/350%C2%B0F%20for%20about%2045%20minutes,%20or%20until%20completely%20set%20and%20golden%20brown%20on%20top.%3C/p%3E%3Cp%3EAllow%20to%20cool%20before%20serving.%20(The%20pie%20will%20deflate%20a%20bit%20as%20it%20cools,%20which%20is%20perfectly%20normal.)%3C/p%3E%3Cp%3ENOTES:%20Angelina%20would%20sometimes%20add%20bits%20of%20semi-sweet%20chocolate%20to%20the%20mixture%20and%20it%20is%20also%20very%20common%20to%20add%20bits%20of%20canditi%20(citron)%E2%80%94one%20or%20the%20other%20but%20not%20both.%20Some%20recipes%20call%20for%20a%20bit%20of%20cinnamon%20and/or%20vanilla%20extract,%20which%20(to%20my%20memory)%20Angelina%20never%20did.%3C/p%3E%3Cp%3EThe%20ricotta-to-egg%20ration%20in%20the%20recipes%20you%20can%20find%20around%20the%20internet%20vary%20wildly.%20Obviously,%20the%20more%20egg,%20the%20more%20'custard-y'%20the%20resulting%20pie.%20Conversely,%20the%20less%20egg,%20the%20more%20'cheese-y'%20the%20pie%20will%20taste.%20I%20find%20that%20a%201%20egg%20per%20100%20gram%20ratio%E2%80%94besides%20being%20easy%20to%20remember%E2%80%94gives%20a%20fine,%20balanced%20result.%20Likewise,%20you%20can%20add%20more%20or%20less%20liqueur%20to%20suit%20your%20taste.%3C/p%3E%3Cp%3ESome%20recipes%20also%20call%20for%20a%20crust%20of%20pasta%20frolla,%20or%20pastry%20dough,%20but%20Angelina%20never%20made%20her%20pizza%20dolce%20that%20way.%3C/p%3E%3Cp%3EThose%20of%20you%20who%20know%20Neapolitan%20cuisine%20will%20no%20doubt%20realize%20that%20pizza%20dolce%20is%20essentially%20a%20vastly%20simplified%20version%20of%20the%20classic%20pastiera%20napoletana,%20the%20traditional%20ricotta%20cheese%20cake%20made%20in%20Naples%20and%20environs%20around%20Easter%20time.%20(I%20made%20one%20for%20Easter%20this%20year,%20but%20sadly%20forgot%20to%20photograph%20it,%20so%20I%20didn't%20blog%20about%20it...)%20But%20although%20some%20Italian-Americans%20do%20associate%20pizza%20dolce%20with%20Easter,%20in%20our%20family%20it%20was%20enjoyed%20year%20round.%20After%20all,%20it's%20so%20easy%20to%20make,%20there's%20just%20no%20reason%20not%20to!%3C/p%3E){kind=link}
