Receta Apple Walnut Muffins
We love muffins at our house and I make a batch every two weeks or so. Nothing better for a quick snack or for breakfast with yogurt. This time of year there is so much wonderful fruit available and I had some great apples on hand so I decided to make a muffin using one of my favorite fruits. I replaced the canola oil in the recipe with applesauce to make it healthier. They are just as tasty and moist using the applesauce. The smell of the apples and cinnamon baking is just heavenly.

Ingredientes
- 3/4 cup unsweetened apple sauce
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup diced apples
- 1/2 cup walnuts, chopped
Direcciones
- Preheat oven to 400. Grease twelve muffin cups.
- Mix together applesauce, sugar and vanilla with a mixer until well blended. Add eggs. Beat for 1 minute. In a separate bowl sift together flour, baking soda, cinnamon and salt. Add these ingredients to the mixer bowl. Beat until combined completely. Stir in chopped apples and nuts.
- Spoon the batter into the muffin tins. Bake 20 minutes until golden brown. Cool on a wire rack. Store in an airtight container. Makes 12.
