Receta Apricot Pork and Beans
Pork and beans – an “All American” side dish that I gave a little tweak to recently. We love the white Great Northern beans and I used them in this version with some dried apricots to create a side dish that could just as easily be served as a main dish. My sweetie was raised up on rice, a Carolina crop for centuries, and asked for some on the side. It made a nice little meal!
Ingredientes
- 2 16 ounce cans Great Northern beans
- cooking oil spray
- 1 ¼ lb lean pork stew meat, diced small
- 1 medium onion, diced small
- 2 tablespoons minced garlic
- 3 ounces dried apricots, diced small
- 2 teaspoons salt
- ¼ cup brown sugar
Direcciones
- Open beans and drain one can only.
- Heat skillet to high, spray with cooking oil and brown pork and onions quickly.
- Add garlic, apricots, salt, brown sugar and beans including liquid from one of the cans.
- Simmer for 15 minutes.
- Yields: 6 cups
