  • 1 1/2 quart Warm, not boiling, water
  • 3 c. Rice
  • 2 1/4 tsp Cinnamon, divided
  • 1/2 c. Sugar
  • 2 c. Rice lowfat milk

  1. In large bowl, pour warm water over rice and 2 tsp. cinnamon. Soak 24 hrs, covered.
  2. Drain liquid from rice, reserving liquid. In food processor or possibly blender, process rice in two batches with bout 1 c. of soaking liquid per batch till nearly smooth. Return rice to remaining soaking liquid. Strain mix through several layers of cheesecloth or possibly coffee filters. (This could take as long as an hour.)
  3. Add in sugar, rice lowfat milk and remaining cinnamon to strained liquid. Chill till chilled . Before serving, process or possibly shake to thoroughly blend.
  4. Makes8 servings of about 1 c. each.
  5. Helpful Hint: Try making this drink with different varieties of rice.
  6. Jasmine rice, for example, creates a different flavor than basmati or possibly other rice.
