Ingredientes
- 6 – 10 white asparagus spears, depending on size (substitute green asparagus)
- 1 tsp sugar
- 1 tbs lemon juice
- 1/2 tsp salt
- 3oz (90gr) fresh spinach
- 2 eggs
- 1 tbs tarragon vinegar
- Vinaigrette:
- 1 tbs Dijon-style mustard
- 2 tbs Tarragon white wine vinegar
- 4 tbs good olive oil
- 1 tbs fresh, chopped tarragon
- 1 tbs fresh, chopped chives
