%20This%20is%20a%20pretty%20basic,%20classic%20version.%20(This%20one%20is%20classic%20with%20a%20twist%20and%20I%20am%20DYING%20to%20try%20it.%20Related:%20have%20you%20guys%20ever%20checked%20out%20Sweet%20Paul?%20It%20is%20GORGEOUS.)%3C/p%3E%3Cp%3EA%20cure%20for%20what%20ails%20you%3C/p%3E%3Cp%3EThis%20version%20is%20perfect%20for%20post-chicken%20dinner%20leftovers.%20The%20key%20is%20homemade%20stock.%20While%20I%20suppose%20it%20is%20not%20technically%20necessary,%20I%20am%20saying%20it%E2%80%99s%20necessary.%20You%20are%20going%20to%20be%20so%20happy%20with%20yourself%20if%20you%20use%20homemade%20stock.%20It%20will%20be%20infinitely%20better.%20Truly.%20There%20are%20plenty%20of%20times%20where%20homemade%20stock%20isn%E2%80%99t%20that%20noticeable%20because%20of%20other%20things%20that%20are%20going%20into%20the%20soup,%20but%20this%20is%20not%20one%20of%20those%20times.%20(STOCK%20REMINDER:%20put%20six%20lbs%20of%20chicken%20backs%20in%20a%20large%20pot%20and%20cover%20with%20water.%20(Use%20wings%20or%20legs%20if%20you%20don%E2%80%99t%20collect%20chicken%20backs%20in%20your%20freezer/can%E2%80%99t%20get%20them%20from%20your%20butcher%20or%20grocery%20store.%20Pro-tip%20%E2%80%93%20ask%20for%20them%20at%20your%20butcher%20or%20grocery%20store.%20Whole%20Foods%20often%20has%20them%20packaged%20with%20the%20other%20chicken%20for%20.99%20a%20pound.%20Way%20cheaper%20than%20you%E2%80%99ll%20pay%20for%20wings.)%20When%20the%20water%20boils,%20take%20the%20chicken%20out,%20dump%20the%20water%20(and%20the%20sludge%20that%20will%20come%20along%20with%20it)%20rinse%20out%20the%20pot,%20and%20add%20the%20chicken%20back%20in%20with%20two%20onions%20peeled%20and%20cut%20in%20half,%20three%20carrots%20peeled%20and%20cut%20in%20large%20pieces,%20three%20celery%20stalks%20peeled%20and%20cut%20in%20pieces,%20a%20head%20of%20garlic%20sliced%20in%20half%20width%20wise,%20two%20or%20three%20bay%20leaves,%20a%20handful%20of%20fresh%20parsley,%20some%20black%20peppercorns%20and%20a%20good%20dash%20of%20salt.%20Cover%20with%20a%20ton%20of%20water%20(I%20use%20a%2012%20quart%20pot%20and%20fill%20it%20close%20to%20the%20top.)%20Bring%20to%20a%20gentle%20boil,%20reduce%20heat,%20simmer%20for%20two%20to%20four%20hours%20or%20as%20long%20as%20you%20are%20hanging%20around%20the%20house,%20strain%20the%20solids%20out,%20and%20voila!%20Chicken%20stock!%20Let%20it%20cool,%20skim%20the%20fat%20off%20the%20top%20and%20use%20what%20you%20need%20and%20freeze%20the%20rest!)%3C/p%3E%3Cp%3EOther%20than%20the%20stock%20and%20the%20leftover%20chicken,%20I%20like%20onion,%20celery,%20a%20little%20bit%20of%20garlic,%20carrots,%20egg%20noodles%20and%20dill.%20And%20that%E2%80%99s%20it.%20Soften%20the%20vegetables%20without%20browning%20them.%20Add%20the%20stock,%20bring%20to%20a%20simmer%20and%20cook%20until%20the%20carrots%20are%20soft.%20Add%20the%20egg%20noodles%20and%20the%20chicken,%20cook%20until%20the%20noodles%20are%20done.%20Add%20the%20dill,%20voila!%20That%E2%80%99s%20it.%20It%20all%20happens%20in%20about%20half%20an%20hour,%20which%20is%20pretty%20funny,%20considering%20Chicken%20Soup%20is%20the%20quintessential%20comfort%20food.%20It%20seems%20like%20the%20quintessential%20comfort%20food%20that%20cures%20all%20ills%20and%20is%20essentially%20a%20word%20that%20has%20come%20to%20symbolize%20home%20itself%20should%20be%20an%20undertaking%20of%20some%20sort.%20But%20it%E2%80%99s%20not.%20Go%20forth.%20Make%20soup.%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20large%20stock%20pot%20over%20medium%20heat.%20Add%20all%20the%20vegetables%20and%20saute%20until%20they%20are%20soft,%20without%20letting%20them%20brown.%20Add%20the%20chicken%20stock,%20bring%20the%20soup%20to%20a%20gentle%20boil,%20then%20reduce%20heat%20and%20let%20it%20simmer%20for%2020%20minutes%20until%20the%20vegetables%20are%20soft.%20Add%20the%20chicken%20and%20the%20noodles,%20and%20cook%20for%20another%20five%20or%20six%20minutes%20until%20the%20noodles%20are%20cooked%20through.%20Add%20the%20dill,%20taste%20for%20salt%20and%20pepper%20and%20add%20as%20needed,%20and%20serve!%20(IF%20you%20are%20planning%20on%20freezing%20or%20bringing%20this%20to%20someone%E2%80%99s%20house,%20or%20saving%20it%20for%20later,%20and%20you%20are%20worried%20about%20the%20noodles%20getting%20too%20mushy,%20leave%20them%20out%20at%20this%20point.%20Or%20take%20some%20of%20the%20soup%20out%20for%20freezing%20or%20transporting%20and%20just%20add%20the%20appropriate%20amount%20of%20noodles%20to%20what%20you%20are%20going%20to%20eat%20now,%20and%20add%20the%20rest%20to%20the%20defrosted/transported/saved%20part,%20so%20they%20don%E2%80%99t%20get%20mushy!)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
