Receta Bacon ,Bean and Kale Soup
Packed with vegges, this hearty soup is infused with the warm spicy flavors of smoked paprika and cumin.Perfect served with lots of crusty bread or garlic bread.This recipe is taken form the Dish Magazine.But it has been tried and tested and everyone who had a taste loved it!.
Ingredientes
- 2 tbsp olive oil
- 1 onion,diced
- 1 carrot diced
- 2 cloves garlic,crushed
- 300 gm waxy potatoes,diced into 2 cm pieces
- 125 gm baco roughly chopped
- Pinch of chilli flakes
- 1 tsp smoked paprika
- 1tsp ground cumin
- 400 tin tomatoes
- 5 cups chicken or vegetable stock
- 6 large stalks kale(if you are not a fan of kale,then use any greens that you like)
- 40 gm tin red kidney beans,drained and rinsed
- salt and freshly ground pepper
- handful of basil leaves
- Parmesan for grating

- FOR SOUP:
- Heat the oil in a large saucepan and cook the onion,carrot,garlic,potatoes,bacon,chilli flakes,smoked paprika and cumin with a good pinch of salt for 10 mins,stirring occasionally.
- Add the tomatoes and stock and bring to the boil.Simmer until the potatoes are tender.Trim the stalks from the kale or other greens and shred the leaves.
- Add to the soup along with the red beans,season if needed and cook until the greens are wilted and just tender.
- TO SWERVE:
- Stir in the basil and divide the sopu between bowls.
- Top with a good grating of Parmesan and serve with warm crusty bread or delicious garlic bread.
