About every other month, my husband and I make a point of dining at a more expensive "upscale" restaurant that is new to us. I usuallly check reviews on both Yelp and Trip Advisor to get a feel for what people rave about. I made reservations and we got dressed up for Date Night on the town.
The restaurant's signature Bacon and Cheddar Biscuits with Maple Chipotle Butter received a

%20and%20there%20it%20was--%20Easy%20Self-Rising%20Biscuits.%20%20I%20was%20ready%20for%20the%20challenge!%3C/p%3E%3Cp%3EFirst,%20I%20wanted%20to%20replicate%20the%20butter.%20Pure%20Maple%20Syrup%20is%20a%20staple%20at%20home.%20Yes,%20I%20do%20keep%20Chipotle%20Chili%20Powder%20on%20hand.%20It%20was%201-2-3%20easy%20to%20do.%20One%20stick%20of%20butter,%20softened.%20I%20settled%20on%204%20Tablespoons%20of%20maple%20syrup%20and%201/2%20teaspoon%20of%20Chipotle%20Chili%20Powder.%3C/p%3E%3Cp%3EI%20rolled%20half%20of%20the%20butter%20in%20plastic%20wrap%20and%20into%20a%20log,%20and%20stuck%20it%20in%20the%20freezer%20for%20another%20use.%20The%20other%20half%20was%20kept%20soft%20for%20the%20biscuits.%3C/p%3E%3Cp%3EI%20keep%20strips%20of%20bacon%20in%20the%20freezer,%20so%20I%20can%20easily%20cut%20it%20into%20lardon%20(strips).%20%20I%20used%20about%206%20strips%20of%20bacon,%20cooked%20till%20almost%20crispy%20and%20then%20drained%20on%20a%20paper%20towel.%3C/p%3E%3Cp%3EI%20used%20Sharp%20Cheddar%20Cheese,%20but%20you%20can%20use%20whatever%20you%20like.%20I%20used%20butter%20for%20the%20biscuits,%20instead%20of%20shortening.%20TIP:%20%20I%20use%20frozen%20butter%20and%20grate%20it%20into%20the%20flour.%20%20I%20think%20this%20is%20much%20easier%20than%20using%20a%20pastry%20cutter.%3C/p%3E%3Cp%3EThe%20grated%20butter%20helps%20me%20to%20easily%20work%20the%20butter%20into%20the%20self-rising%20flour%20with%20my%20hands,%20without%20warming%20it%20too%20much.%20%20Cold%20butter%20=%20tender%20biscuits.%20I%20then%20added%20the%20cheese%20and%20bacon.%3C/p%3E%3Cp%3EI%20am%20convinced%20that%20using%20buttermilk%20makes%20a%20very%20tender%20biscuit.%20Once%20the%20dough%20comes%20together%20as%20%22shaggy%22,%20I%20dump%20it%20onto%20a%20floured%20surface.%20%20We're%20not%20going%20to%20be%20kneading%20the%20dough,%20or%20I'll%20get%20some%20tough%20biscuits.%20Instead,%20with%20floured%20hands,%20we'll%20fold%20press%20the%20dough%20together%20and%20then%20fold%20it%20over%20itself%20a%20few%20times.%3C/p%3E%3Cp%3EWe're%20building%20some%20layers%20of%20dough,%20for%20a%20tender%20biscuit.%20I%20chose%20to%20pat%20and%20shape%20the%20dough%20into%20a%20large%20rectangle,%20using%20a%20bench%20scraper.%3C/p%3E%3Cp%3EUsing%20a%20sharp%20knife,%20I%20cut%20the%20rectangle%20into%20eight%20biscuits,%20and%20baked%20them%20until%20golden%20brown--%20about%3C/p%3E%3Cp%3E12%20minutes.%20%20The%20self-rising%20flour%20gives%20a%20lot%20of%20%22lift%22%20to%20my%20biscuits.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20The%20restaurant%20served%20these%20in%20the%20cutest%20single%20serving%20rectangle%20cast%20iron%20dishes.%20I'd%20love%20to%20get%20my%20hands%20on%20those.%20Other%20than%20that,%20I%20do%20believe%20I%20captured%20the%20flavor%20of%20the%20biscuits.%20%20I%20might%20cut%20back%20just%20a%20wee%20bit%20on%20the%20cheddar%20cheese,%20though%20it%20wasn't%20a%20bad%20thing%20with%20lots%20of%20melted%20cheesy%20goodness.%20The%20bacon%20ratio%20was%20perfect.%20%20I%20love%20the%20butter!%20With%20each%20tender%20biscuit%20bite,%20I%20could%20taste%20buttery%20goodness,%20salty%20bacon,%20sharp%20cheddar%20and%20the%20sweetness%20of%20the%20maple%20and%20a%20slight%20heat%20of%20the%20chipotle%20chili.%20This%20has%20made%20me%20appreciate%20what%20a%20good%20biscuit%20is%20all%20about.%3C/p%3E%3Cp%3ENOTE:%20I%20can't%20find%20King%20Arthur%20Flour%20Self-Rising%20flour%20at%20my%20grocery%20store,%20but%20I%20intend%20to%20order%20more%20online.%20%20I've%20made%20great%20self-rising%20scones%20with%20this%20flour,%20and%20a%20cake%20recipe%20that%20I%20have%20yet%20to%20post.%20This%20is%20a%20great%20product,%20and%20it%20makes%20baking%20so%20simple%20to%20do.%3C/p%3E%3Cp%3EI%20am%20not%20sponsored%20by%20King%20Arthur%20Flour,%20nor%20am%20I%20paid%20to%20promote%20their%20products.%20I%20simply%20love%20them!%3C/p%3E%3Cp%3EI%20served%20these%20biscuits%20with%20my%20first%20Southern%20Style%20Fried%20Chicken.%20It's%20fried%20in%20a%20lot%20less%20oil%20than%20you'd%20think,%20and%20then%20baked%20in%20the%20oven.%3C/p%3E%3Cp%3EEnjoy,%3C/p%3E){kind=link}
