Receta Bacon Fried Squirrel

Ingredientes
- 4 x young squirrels each cut 6 to 8 pcs
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/2 tsp garlic pwdr
- 1/4 c. all-purpose flour
- 8 slc bacon minced
- 1/4 c. onion sliced
- 2 x celery stalks sliced
- 1 Tbsp. fresh rosemary leaves chopped
- 2 tsp lemon juice
- 1 c. chicken broth
- 4 c. hot cooked rice
Direcciones
- Combine salt, pepper, garlic pwdr and flour. Dredge squirrels in flour mix.
- Cook bacon in a heavy skillet over medium heat till browned. Fry squirrel pcs in bacon grease till medium brown. Add in remaining ingredients and reduce heat to simmer. Cover and cook for about 1 1/2 hrs or possibly till squirrel pcs are tender.
- Serve with hot rice.
- This recipe yields 4 servings.
- Comments: Anything fried, squirrel included, tastes pretty good. The squirrels are first fried and then simmered in liquid till tender. Young squirrels taste much better than old ones. If you are worried about fat and cholesterol, eat a carrot.
