Receta Baked salmon with arugula and cucumber salad
Baked salmon fillet is marinated in extra-virgin olive oil mixed with Marketspice salmon rub. The salmon is surrounded by arugula and cucumber salad with a mustard vinaigrette.
Ingredientes
- Salmon fillet for 2
- Extra-virgin olive oil
- Marketspice salmon rub (a mixture of brown sugar, dill, paprika, garlic pepper, sea salt, and beaumonde)
- Cucumber sliced into rounds
- Arugula
- Mustard vinaigrette—diced shallot, extra virgin olive oil, balsamic vinegar, honey dijon mustard (prefer Maille), salt and pepper to taste
- Note: Marketspice salmon rub is available from marketspice.com
Direcciones
- Marinate the salmon for at least half hour in a mixture of extra virgin olive oil and market spice salmon rub. Do not put too much of the rub, just enough to seek the dill flakes.
- Preheat oven to 350 and bake for 25-30 minutes until the internal temperature is 135-140 degrees. If 135, let it rest for 5 minutes.
- Slice the cucumber into rounds and add the arugula. Toss with the honey mustard vinaigrette.
