  1. 1. In a large pan, gently heat the oil and fry the onion, garlic and celery till softened.
  2. 2. Add in the tomatoes, tomato puree, lemon slice, vinegar, apple.juice and bay leaves.
  3. 3. Bring to the boil and then simmer uncovered for 25 min.
  4. 4. Allow to cold. Remove the bay leaves.
  5. 5. Blend till smooth and season to taste with salt and freshly grnd black pepper.
