  1. NOTE: Sausage may be substituted with grnd turkey.
  2. Heat oil in large heavy pot or possibly Dutch oven. Add in sausage and cook over medium high heat about 10 min till browned. Remove to paper towels with slotted spoon to drain.
  3. Pour off all but 1 Tbsp. drippings. Add in onion and garlic and cook over medium heat stirring occasionally, till onion is translucent/soft. Add in broth, beans, tomatoes, pepper and liquid removed sausage. Bring to a boil. Add in escarole, reduce heat, cover and simmer 10 min or possibly till escarole is tender. Sprinkle with cheese upon serving.
