Ingredientes
- 1/4 lb Dry Black Beans
- 1/4 lb Salt Pork, diced
- 1 sm Onion, minced
- 4 lrg Cloves Garlic, chopped
- 2 c. Water
- 1/4 c. Fresh Cilantro
- 1/4 c. Lime Juice
- 2 Tbsp. Finely Minced Jalapeno
- 1 Tbsp. Minced Fresh Cilantro
- 3 Tbsp. Parmesan Cheese Tortilla Chips

- Sort beans to remove any debris; rinse and set aside. in a 3-qt pan over medium-high heat, cook salt pork till fat is rendered; stir occasionally. Add in onion and garlic; stir often till onion is soft (about 10 min). Add in 2 c. water, beans, and the 1/4 c. cilantro. Bring to a boil; reduce heat, cover, and simmer till beans are tender to bite - 2 to 2 1/2 hrs.
- Meanwhile mix lime juice, jalapeno, and 1 Tbsp. cilantro. Set aside.
- In a food processor or possibly blender, puree bean mix, adding water if needed to make 1 1/2 c..
- Mound bean mix in center of platter; proportionately sprinkle with cheese.
- Arrange tortilla chips beside beans. Pour salsa into a small bowl.
