Receta Black Beans And Yam And Cashews

Ingredientes
- 1 x onion minced or possibly sliced several cloves garlic chopped
- 2 c. yams or possibly sweet potato (2 to 3) peeled and cut into 1" cubes
- 1 x Scotch bonnet chile pepper or possibly habanero chile stem and seeds removed minced
- 2 Tbsp. extra virgin olive oil
- 1/2 c. chicken broth
- 1 can black beans liquid removed
- 1/2 tsp dry thyme
- 1 tsp grnd cumin
- 1/4 tsp freshly grnd black pepper
- 1 tsp vinegar I used rice vinegar
- 1 c. cashews rinsed if salted
Direcciones
- Saute/fry the onions, garlic, yam and chile in the oil for 5 min. Add in the broth, bring to a boil, reduce the heat, cover and simmer till the pumpkin is tender.
- Add in the beans, thyme, cumin, black pepper and vinegar. Continue to simmer till the beans are heated through. Stir in the cashews and cook 1 minute longer.
- I served this over rice cooked with chicken stock. You might want to providesome yogurt or possibly lowfat sour cream if the stew is too spicy for someone.
