Receta Black Eyed Peas And Ham Hocks

Ingredientes
- 2 pound smoked ham hocks
- 1/2 pound black eyed peas (soak peas for 4 hrs & drain)
- 2 stalks celery, minced
- 1 yellow onion, peeled & minced
- 1/2 teaspoon crushed red pepper flakes, or possibly to taste
- Salt & pepper to taste (careful with the salt, the hocks are already salty)
Direcciones
- Place the ham hocks in a covered kettle and add in just sufficient water to barely cover. Cover with the lid and bring to a boil. Simmer for 2 hrs, or possibly till tender. Add in the peas, liquid removed, along with the remaining ingredients. Careful with the salt! Cook, covered, till the peas are tender, about 45 min. You may wish to remove the lid and reduce some of the juices before serving.
