%20Panna%20Cotta%3C/p%3E%3Cp%3EWhoever%20came%20up%20with%20the%20idea%20of%20letting%20the%20common%20man%20onto%20a%20farm%20to%20pick%20fruits%20must%20have%20been%20a%20genius.%20Pratik%20and%20I%20had%20been%20fascinated%20by%20the%20idea%20of%20picking%20berries%20on%20a%20farm%20for%20a%20while,%20but%20had%20never%20actually%20got%20a%20chance%20to%20try%20it%20out.%20So%20when%20we%20made%20a%20trip%20to%20Canada%20this%20summer%20to%20visit%20my%20aunt,%20we%20were%20delighted%20when%20she%20asked%20whether%20we%20wanted%20to%20go%20strawberry%20picking.%20In%20that%20excitement,%20I%20remember%20letting%20out%20a%20brief%20shriek,%20confusing%20my%20aunt%20about%20whether%20I%20was%20really%20excited%20about%20the%20idea%20or%20whether%20it%20sounded%20so%20disgusting%20that%20I%20was%20in%20some%20sort%20of%20panic%20mode.%20It%20was%20hysterical.%20Anyway,%20things%20were%20sorted%20out%20and%20we%20jetted%20off%20to%20one%20of%20the%20farms%20close%20to%20her%20home.%3C/p%3E%3Cp%3EIt%20was%20an%20awesome%20experience.%20We%20could%20pick%20what%20we%20wanted,%20eat%20what%20we%20picked%20and%20to%20top%20that,%20take%20home%20a%20basket%20full.%20All%20for%20just%205%20bucks.%20Eating%20all%20the%20strawberries%20picked%20fresh%20off%20the%20farm%20on%20a%20beautiful%20summer%20day!%20What%20more%20could%20one%20want?%20The%20tartness%20of%20these%20fruits,%20along%20with%20their%20sweetness%20is%20what%20makes%20these%20summer%20fruits%20extra%20special!%3C/p%3E%3Cp%3EBack%20from%20the%20trip,%20my%20memory%20still%20fresh%20from%20the%20lovely%20strawberry%20picking%20experience,%20I%20went%20looking%20for%20strawberries%20at%20our%20farmers%20market.%20I%20wanted%20to%20try%20out%20a%20strawberry%20panna%20cotta.%20As%20luck%20would%20have%20it,%20they%20didn't%20have%20any!%20However,%20the%20bluberries%20there%20looked%20fabulous.%20I%20picked%20some%20up%20with%20the%20idea%20that%20I%20would%20now%20make%20a%20blueberry%20panna%20cotta%20instead.%3C/p%3E%3Cp%3ELike%20most%20of%20you%20know,%20panna%20cotta%20translates%20to%20'cooked%20cream'.%20Given%20our%20calorie%20filled%20vacation%20though,%20I%20wanted%20to%20create%20a%20lighter,%20healthier%20version.%20So%20I%20experimented%20with%20using%20buttermilk%20instead%20of%20the%20cream.%20We%20absolutely%20loved%20the%20result%20and%20will%20definitely%20make%20this%20again!%3C/p%3E%3Cp%3EAs%20a%20completely%20random%20side,%20are%20any%20of%20you%20watching%20the%20basketball%20games%20at%20the%20Olympics?%20Chris%20Kaman,%20playing%20for%20Germany,%20summarized%20Team%20USA's%20performance%20absolutely%20perfectly%20after%20Germany%20got%20routed%20by%20them%20yesterday:%20%22Nobody%20is%20going%20to%20beat%20them.%20No%20way,%20it's%20just%20not%20going%20to%20happen%22.%20Gotta%20love%20those%20guys!%20More%20on%20that%20later.%3C/p%3E%3Cp%3EHere%20we%20go%20with%20the%20recipe:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EGrease%208%20small%20ramekins%20with%20some%20oil.%3C/p%3E%3Cp%3EProcess%20the%20blueberries%20and%201%20tbs%20of%20sugar%20in%20a%20food%20processor%20until%20smooth.%20If%20desired,%20strain%20this%20puree%20through%20a%20fine%20sieve.%3C/p%3E%3Cp%3ESoak%20the%20gelatin%20in%20cold%20water.%3C/p%3E%3Cp%3ECombine%20the%20first%20four%20ingredients%20in%20a%20small%20saucepan.%20Bring%20it%20to%20a%20slow%20simmer%20stirring%20continuously.%20Add%20the%20soaked%20gelatin%20in%20this%20mixture%20while%20whisking%20steadily.%20Add%20the%20blueberry%20puree%20and%20mix%20well.%3C/p%3E%3Cp%3EPour%20into%20the%20greased%20ramekins.%20Allow%20to%20cool%20outside%20for%2010%20minutes.%20Keep%20in%20the%20refrigerator%20overnight.%3C/p%3E%3Cp%3EServing:%3C/p%3E%3Cp%3ETo%20unmold,%20dip%20the%20ramekins%20in%20hot%20water%20for%20about%2010%20seconds%20and%20carefully%20flip%20on%20to%20a%20plate.%20Alternately,%20run%20a%20knife%20along%20the%20edges%20of%20the%20ramekins%20and%20then%20flip%20on%20to%20a%20plate.%20Top%20with%20mint%20sprigs%20and%20more%20blueberries%20if%20desired.%3C/p%3E%3Cp%3ENote:%3C/p%3E%3Cp%3EIt%20is%20very%20important%20to%20stir%20the%20buttermilk%20continuously%20while%20simmering%20to%20prevent%20it%20from%20curdling.%20I%20have%20used%20buttermilk%20to%20keep%20the%20dessert%20healthy.%20You%20could%20use%20a%20combination%20of%20buttermilk,%20half%20&%20half;%20heavy%20cream%20(1%20cup%20each).%3C/p%3E%3Cp%3EHealth%20Benefits:%3C/p%3E){kind=link}
