- Crumb Topping:
- 1 cup flour
- 1 tsp baking powder
- 3 tbs brown sugar
- 2 tbs regular sugar
- 1 tsp grated lemon zest
- 6 tbs butter, melted
- Muffins:
- 1 3/4 cups flour
- 2 1/4 tsp baking powder
- 1/2 tsp salt
- 1 cup sugar
- 2 eggs
- 3/4 cup milk (don't use skim or 1%)
- 1/2 cup oil
- 1/2 tsp lemon extract
- 3 tsp grated lemon zest
- 1 cup frozen blueberries (do not thaw)
- 1 tbs flour
