- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups frozen blueberries
- 1/4 cup flour
- slivered almonds
- zest of one lime
- 2 tablespoons sugar

%20%20If%20that's%20not%20a%20good%20endorsement,%20I%20don't%20know%20what%20is!%3C/p%3E%3Cp%3EI%20decided%20that%20I%20wanted%20lime%20and%20almond%20flavor%20incorporated%20somehow.%20%20So,%20I%20made%20soured%20milk%20by%20adding%20the%20juice%20of%20one%20lime%20to%201/2%20cup%20of%20almond%20milk.%20%20I%20also%20decided%20to%20top%20the%20cake%20with%20a%20lime%20infused%20sugar%20along%20with%20some%20slivered%20almonds.%20%20The%20surprise%20part?%20%20Well,%20thanks%20to%20Dawn,%20I%20had%20some%20Solo%20Almond%20Filling.%20%20I%20knew%20I%20wouldn't%20use%20the%20whole%20can%20in%20my%20pie,%20so%20I%20decided%20to%20spread%20a%20layer%20of%20almond%20pie%20filling%20between%20cake%20layers.%20%20Doesn't%20that%20sound%20delicious?%20%20It%20was%20so%20moist%20and%20yummy.%20%20My%20only%20complaint%20is%20the%20lime%20wasn't%20present%20enough%20for%20me.%20%20I%20think%20next%20time%20it%20needs%20lime%20zest%20in%20the%20batter%20too.%3C/p%3E%3Cp%3EBlueberry%20Lime%20Coffeecake%20Surprise%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EMix%20the%20zest%20of%20lime%20and%202%20tablespoons%20of%20sugar%20in%20a%20small%20bowl%20and%20rub%20together%20with%20your%20fingers%20to%20infuse%20the%20lime%20into%20the%20sugar.%20%20Set%20aside.%3C/p%3E%3Cp%3EPlace%20lime%20juice%20and%20almond%20milk%20in%20measuring%20cup%20and%20set%20aside.%20%20With%20hand%20mixer%20in%20medium%20bowl,%20beat%20butter%20and%20sugar%20until%20creamy.%20%20Add%20egg%20and%20almond%20extract%20and%20mix%20until%20egg%20is%20thoroughly%20incorporated.%20%20In%20another%20bowl,%20blend%201-3/4%20cup%20flour,%20baking%20powder,%20and%20salt.%20%20Prep%20blueberries%20by%20tossing%20with%201/4%20cup%20flour.%20%20Set%20aside.%3C/p%3E%3Cp%3EAdd%20flour%20and%20milk%20to%20butter%20mixture,%20starting%20with%20flour%20and%20ending%20with%20flour,%20mixing%20well%20after%20each%20addition.%20%20Drop%20in%20a%20good%20heaping%20tablespoon%20of%20almond%20filling%20and%20mix%20into%20batter.%20%20Fold%20in%20blueberries.%20%20Spray%209x9%20glass%20baking%20dish%20with%20cooking%20spray.%20%20Spread%201/2%20of%20batter%20mix%20in%20bottom%20of%20pan.%20%20Spread%20remaining%20almond%20filling%20over%20bottom%20layer,%20top%20with%20remaining%20batter.%20%20Note:%20%20The%20batter%20does%20not%20spread%20easily.%20%20Be%20patient%20and%20use%20the%20back%20of%20a%20large%20spoon.%20%20I%20will%20work,%20I%20promise,%20just%20look%20at%20my%20cake.%20%20lol%3C/p%3E%3Cp%3ESprinkle%20top%20of%20cake%20with%20infused%20sugar%20and%20slivered%20almonds.%20%20Bake%20in%20350%20oven%20for%2045%20minutes.%20%20It%20will%20take%20this%20long%20(if%20not%20longer)%20since%20it%20is%20a%20thick%20cake.%20%20Let%20cool%20at%20least%2015%20minutes,%20then%20dig%20in!%3C/p%3E){kind=link}
