Receta Brown Cabbage Soup
A variation of a favorite Scandinavian soup in which the cabbage and the accompanying vegetables are caramelized in a pan prior to being added to the broth!

Ingredientes
- Soup bone, 3 to 4 pounds
- Water
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 bay leaf
- 1/2 medium cabbage
- 2 medium onions, sliced
- 1 cup celery, chopped
- 1 cup carrots, peeled and chopped
- 1 cup beet greens, chopped
- 1 tablespoon fat or cooking oil
Direcciones
- Cover bone with water and add salt, pepper and bay leaf. Heat to boiling and cook 1 1/2 hours.
- 2.
- Cut cabbage into eighths and cook with remaining vegetables in fat or oil. Brown well. Add to stock and bone and continue cooking for 3/4 hour.
- 3.
- Remove meat from bone and return it to the soup.
- 4.
- Serve, if desired, with a dollop of sour cream.
