Ingredientes

  • 2 c. assorted brown rice (500 ml)
  • 2 Tbsp. toasted peanut oil (30 ml)
  • 3 Tbsp. apple cider vinegar (45 ml)
  • 1/2 sm chili, finely minced
  • 3 x green onions minced grated zest and juice of 1 orange
  • 1/3 c. minced dry apricots (75 ml)
  • 1 x red pepper, sliced into strips coarse salt and freshly grnd pepper, to taste minced fresh cilantro, to taste

Direcciones

  1. Cook rice in boiling, salted water according to package directions. Strain and cold.
  2. In a medium bowl combine remaining ingredients with rice and toss till well blended. Season with salt and pepper and sprinkle with some minced fresh cilantro.
  3. The brown rice gives a good nutty flavour to this salad while the orange and orange zest gives it which fresh zing!
