Ingredientes
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 cup granulated sugar
- 2 T orange zest (I used zest of 1 orange plus some orange oil)
- 3 egg yolks
- 5 egg whites
- 1 cup pumpkin puree (canned is fine; do not use pumpkin pie filling)
- 1 1/2 cups AP flour, fluffed, scooped and leveled
- 1/2 cup cake flour, fluffed, scooped and leveled
- 2 t baking powder
- 1/4 t salt
- For the glaze:
- juice of one large orange
- 1 T fresh lemon juice
- 1 1/2 cups powdered sugar

.%20This%20month%20I%E2%80%99m%20in%20the%20door,%20as%20it%20were!%20I%20am%20part%20of%20the%20party!%20We%E2%80%93those%20of%20us%20who%20have%20joined%20the%20group%20and%20promised%20to%20post%20at%20the%20same%20time%20in%20the%20beginning%20of%20the%20month%E2%80%93are%20posting%20our%20October%20cakes%20and%20announcing%20the%20theme.%20So%20feel%20free%20to%20bake%20along!%3C/p%3E%3Cp%3EBesides,%20you%20know%20it%20is%20not%20a%20hardship%20for%20me%20to%20make%20multiple%20bundt%20cakes%20in%20one%20month.%3C/p%3E%3Cp%3EOh%20yeah,%20so%20what%20is%20the%20theme?%20I%E2%80%99ll%20give%20you%20three%20guesses%20but%20I%20bet%20you%20only%20need%20one.%20It%20is%20October%20after%20all.%20Pumpkin!%3C/p%3E%3Cp%3EWe%20enjoyed%20this%20cake%20more%20as%20a%20breakfast%20cake%20than%20we%20did%20as%20dessert.%20I%20don%E2%80%99t%20know%20why.%20I%20don%E2%80%99t%20seem%20to%20be%20as%20enthusiastic%20about%20pumpkin%20this%20year%20for%20some%20reason.%20Also,%20I%20am%20writing%20the%20instructions%20to%20include%20a%20little%20lemon%20juice%20in%20the%20glaze%20because%20with%20just%20orange%20juice%20it%20was%20a%20tad%20too%20sweet.%20The%20soft,%20moist,%20but%20not%20heavy%20texture%20of%20this%20cake%20is%20its%20strong%20point.%20It%20is%20lighter%20than%20more%20pumpkin%20cakes,%20lifted%20by%205%20whipped%20egg%20whites.%20It%20would%20make%20an%20excellent%20palate%20to%20play%20with%20other%20flavor%20combinations,%20such%20as%20adding%20spices%20and/or%20removing%20the%20orange.%3C/p%3E%3Cp%3EAlthough%20I%20get%20to%20be%20part%20of%20the%20fun,%20%23BundtaMonth%20is%20Anuradha%E2%80%99s%20and%20Lora%E2%80%99s%20brainchild,%20so%20be%20sure%20to%20check%20out%20their%20posts%20at%20Baker%20Street%20or%20Cake%20Duchess.%20And%20if%20you%20want%20to%20participate,%20check%20out%20the%20guidelines%20below%E2%80%93you%20have%20until%20October%2031!%3C/p%3E%3Cp%3EGlazed%20Orange%20Pumpkin%20Bundt%20Cake%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Regan%20Daley,%20In%20The%20Sweet%20Kitchen*%3C/p%3E%3Cp%3EFor%20the%20cake:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20Grease%20a%209%20or%2010%20inch%20bundt%20pan%E2%80%93this%20cake%20domes%20nicely,%20so%20one%20thing%20I%20learned%20is%20that%20a%20tube%20pan%20might%20have%20been%20nicer%20(so%20that%20it%20did%20not%20have%20to%20be%20turned%20upside%20down).%3C/p%3E%3Cp%3EWhisk%20together%20the%20flours,%20baking%20powder%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20the%20butter%20and%20orange%20zest%20(or%20oil)%20until%20fluffy.%20Slowly%20add%20the%20sugar,%20creaming%20until%20light%20and%20fluffy%20again.%20Add%20the%20egg%20yolks,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20Be%20sure%20to%20scrape%20down%20the%20sides%20of%20the%20pan%20as%20needed.%20Beat%20in%20the%20pumpkin%20puree.%3C/p%3E%3Cp%3EGently%20stir%20the%20dry%20ingredients%20into%20the%20wet,%20in%203-4%20additions.%20%20Set%20aside.%3C/p%3E%3Cp%3EWhip%20the%20egg%20whites%20until%20they%20hold%20soft%20peaks.%20Fold%201/4%20of%20them%20into%20the%20cake%20batter.%20Then%20gently%20fold%20the%20remaining%20egg%20whites%20into%20the%20cake%20batter.%20Scrape%20into%20the%20prepared%20pan%20and%20smooth%20the%20top.%3C/p%3E%3Cp%3EBake%20for%2050-60%20minutes,%20or%20until%20a%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean%20and%20the%20sides%20of%20the%20cake%20are%20pulling%20away%20from%20the%20sides%20of%20the%20pan.%20%20Let%20cool%20for%2010%20minutes.%3C/p%3E%3Cp%3EInvert%20the%20cake%20onto%20parchment%20paper%20on%20a%20cooling%20rack.%20Flip%20a%20second%20time%20if%20you%20are%20using%20a%20tube%20shaped%20pan,%20but%20leave%20upside%20down%20if%20you%20used%20a%20bundt%20pan.%20Let%20cool%20completely%20before%20glazing.%3C/p%3E%3Cp%3EWhisk%20the%20glaze%20ingredients%20together.%20Place%20wax%20paper%20under%20the%20bundt%20cake%20and%20cooling%20rack%20(remove%20the%20parchment%20paper%20but%20leave%20the%20cake%20on%20the%20cooling%20rack).%20Pour%20the%20glaze%20over%20the%20cake%E2%80%93when%20it%20stops%20dripping,%20place%20a%20new%20piece%20of%20wax%20paper%20under%20the%20cake%20and%20squeeze%20the%20dripped%20glaze%20out%20of%20the%20wax%20paper%20onto%20the%20cake%20in%20a%20second%20layer.%20Repeat%20until%20you%20are%20happy%20with%20the%20cake%20or%20have%20used%20up%20the%20glaze.%20Let%20the%20glaze%20set%20before%20slicing.%3C/p%3E%3Cp%3E*Note%20that%20I%20have%20owned%20In%20The%20Sweet%20Kitchen%20for%20many%20years%20(and%20love%20it),%20but%20there%20is%20a%20new,%20domestic%20version%20available.%20I%20have%20not%20checked%20it%20out.%3C/p%3E%3Cp%3EHere%E2%80%99s%20how%20you%20can%20join%20the%20%23BundtaMonth%20party:%3C/p%3E%3Cp%3E-%20Bake%20your%20Bundt%20for%20October%20following%20the%20theme%20%E2%80%93%20Pumpkin.%3C/p%3E%3Cp%3E-%20Post%20it%20before%20October%2031,%202012.%3C/p%3E%3Cp%3E-%20Use%20the%20%23BundtaMonth%20hashtag%20in%20your%20title.%20(For%20ex:%20ti
