cao?%20Tasty!%20When%20I%20first%20tasted%20the%20ostrich%20raw,%20by%20itself,%20I%20immediately%20thought%20of%20a%20cocoa%20flavor%20-%20I%20knew%20I%20didn't%20want%20something%20sweet,%20but%20just%20wanted%20that%20raw,%20essence%20of%20chocolate%20flavor.%20%20What%20better%20to%20use%20than%20straight%20up,%20cacao?%20It%20definitely%20paired%20beautifully.%20%20It%20brought%20out%20the%20flavor%20of%20the%20meat,%20but%20didn't%20cover%20it%20up%20at%20all.%20The%20flavor%20of%20the%20cacao%20also%20came%20through%20a%20tad%20in%20the%20red%20wine%20reduction,%20pulling%20all%20the%20flavors%20together.%20%20Since%20ostrich%20and%20the%20reduction%20are%20both%20%22heavier%22%20flavors,%20the%20freshness%20of%20the%20kale%20saute%20really%20evened%20everything%20out.%20%20The%20vinegar%20finish%20was%20key.%3C/p%3E%3Cp%3EAltogether,%20this%20was%20a%20serious%20ostrich%20party.%20%20I%20think%20people%20need%20to%20reevaluate%20the%20delicious-ness%20of%20this%20protein%20and%20really%20give%20it%20a%20shot!%3C/p%3E){kind=link}
