%3C/p%3E%3Cp%3EAnyway,%20we%20found%20ourselves%20living%20in%20a%20three%20room%20cabin%20out%20in%20the%20country%20thanks%20to%20the%20generosity%20of%20a%20dear%20friend.%20It%20was%20a%20quaint%20little%20place%20and%20very%20comfortable.%20In%20fact,%20looking%20back,%20with%20all%20the%20stress%20in%20our%20lives%20at%20that%20moment%20the%20closeness%20and%20solitude%20(no%20cable%20TV,%20no%20Internet)%20was%20a%20boon.%3C/p%3E%3Cp%3EDuring%20that%20time%20we%20fell%20into%20a%20sort%20of%20ritual.%20Our%20local%20grocery%20store%20bakery%20had%20wonderful%20butter%20rum%20muffins.%20We'd%20buy%20a%20couple%20packs%20from%20the%20bakery%20and%20heat%20them%20up%20in%20the%20microwave%20(no%20stove%20in%20the%20cabin).%20Then%20we'd%20serve%20them%20with%20wonderful%20coffee,%20usually%20Southern%20Pecan%20or%20some%20other%20flavor.%20It%20was%20a%20special%20time%20of%20day%20for%20us%20although%20neither%20of%20us%20were%20coffee%20drinkers%20before%20or%20since!%3C/p%3E%3Cp%3ESince%20that%20time%20butter%20rum%20muffins%20have%20become%20a%20special%20treat%20for%20us.%20Here%20in%20Arizona%20we've%20found%20them%20in%20a%20few%20stores%20although%20it's%20hard%20to%20get%20to%20them%20before%20they're%20sold%20out.%3C/p%3E%3Cp%3ESo,%20here%20you%20go,%20Butter%20Rum%20Muffins:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20375%20degrees%20F.%3C/p%3E%3Cp%3E2.%20Grease%20or%20line%20muffin%20tins%20(6%20large%20or%2012%20small%20cups)%3C/p%3E%3Cp%3E3.%20Cream%20together%20butter%20and%20sugar.%3C/p%3E%3Cp%3E4.%20Add%20eggs,%20one%20at%20a%20time,%20beating%20just%20until%20blended%20after%20each%20addition.%3C/p%3E%3Cp%3E5.%20Sift%20flour,%20baking%20powder,%20salt,%20cloves%20and%20nutmeg%20together%20in%20a%20separate%20bowl.%3C/p%3E%3Cp%3E6.%20Combine%20milk%20and%20rum%20extract%20in%20another%20bowl.%3C/p%3E%3Cp%3E7.%20Add%20flour%20mixture%20to%20butter%20mixture%20alternately%20with%20milk%20mixture,%20ending%20with%20flour%20mixture.%3C/p%3E%3Cp%3E8.%20Spoon%20batter%20into%20muffin%20pan,%20filling%203/4%20full.%3C/p%3E%3Cp%3E9.%20Bake%20for%2020%20to%2025%20minutes%20or%20until%20golden.%3C/p%3E%3Cp%3E10.%20Remove%20from%20pans%20immediately%20and%20cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3ESo%20there%20you%20have%20it.%20A%20fairly%20simple%20little%20recipe.%20In%20the%20original%20a%20sugar/rum%20glaze%20is%20provided.%20I%20opted%20not%20to%20do%20that%20on%20the%20ones%20this%20morning,%20but%20in%20retrospect%20the%20added%20sugar%20might%20have%20been%20welcomed.%20At%20any%20rate,%20I'll%20be%20playing%20with%20this%20recipe%20a%20bit%20and%20will%20post%20updates%20to%20it.%3C/p%3E%3Cp%3EBlogThis!%3C/p%3E){kind=link}
