  1. FIRST DAY: Soak cucumbers overnight in 2 c. lime and 8 1/2 quarts. water.
  2. SECOND DAY: Wash in cool water, let soak in ice water for 3 hours. Drain well. Simmer 2 hours. in 1 c. vinager, 1 Tbsp. of alum, food color, with sufficient water to cover.
  3. Drain well and throw away. Make and heat syrup 2 c. vinegar, 2 c. water, 7 c. of sugar, 8 sticks cinnamon, 3/4 c. red warm candy. Pour over rings let stand 24 hours.
  4. THIRD DAY: drain off syrup add in 1 c. of sugar, reheat and pour over rings.
  5. FOURTH DAY: Same as above.
  6. FIFTH DAY: Drain off syrup and add in 1 c. of sugar. Pack cucumbers in jars, cover with warm syrup. Put rings and seals on, tighten.
