%3C/p%3E%3Cp%3ESpring%20is%20a%20bittersweet%20time%20for%20me.%20%20Sweet,%20as%20the%20tree%20buds%20begin%20to%20unfurl%20with%20that%20intense%20green,%20bringing%20the%20land%20back%20to%20verdant%20life.%20%20Bitter,%20for%20I%20must%20bid%20a%20sad%20farewell%20to%20my%20favorite%20winter%20time%20treats.%20%20For%20it%20is%20the%20Spring%20that%20heralds%20the%20end%20of%20Blood%20Orange%20and%20Meyer%20Lemon%20season.%20%20:(%20%20But%20all%20is%20not%20lost.%20%20At%20least%20not%20this%20year.%3C/p%3E%3Cp%3EI%20watched.%20%20I%20waited.%20%20I%20planned.%20%20I%20schemed.%20%20I%20snatched%20up%20some%20of%20the%20last%20Blood%20Oranges%20that%20were%20available%20this%20year.%20%20%20%20Muah%20ha%20ha%20ha%20ha!%3C/p%3E%3Cp%3ENow%20is%20the%20time%20to%20set%20my%20master%20plan%20in%20motion........%20%20to%20preserve%20their%20Blood%20Orange-ness,%20to%20be%20enjoyed%20during%20the%20Spring,%20Summer%20and%20Autumn%20months%20which,%20though%20overflowing%20with%20warmth%20and%20sunshine,%20are%20sadly%20devoid%20of%20the%20bright%20and%20sunny%20flavor%20of%20Blood%20Oranges.%3C/p%3E%3Cp%3EBlood%20Orange%20Marmalade%20is%20my%20master%20plan.%20%20It's%20a%20bit%20of%20a%20departure%20from%20the%20famous%20Dundee%20brand%20Marmalade,%20made%20with%20Seville%20Oranges,%20but%20I%20feel%20that%20this%20is%20the%20best%20way%20for%20me%20to%20preserve%20my%20Blood%20Oranges%20for%20future%20enjoyment.%3C/p%3E%3Cp%3EThere%20is%20no%20way%20around%20it.%20%20Making%20marmalade%20is%20more%20time%20consuming%20than%20making%20jam%20or%20jelly.%20%20It's%20a%20big%20chore,%20and%20as%20such,%20it%20takes%20a%20couple%20days.%20%20Granted,%208%20-12%20hours%20of%20that%20is%20waiting%20time.%20%20So%20technically,%20if%20you%20started%20early%20in%20the%20morning,%20you%20could%20make%20it%20in%20a%20single%20day.%20%20I%20didn't%20get%20started%20till%20this%20afternoon,%20so%20it%20will%20take%20me%202%20days%20to%20complete.%3C/p%3E%3Cp%3EThis%20is%20mainly%20because%20I%20am%20being%20stubborn.%20%20I%20know,%20you%20are%20gasping%20with%20surprise,%20right?%20%20%20The%20whole%20process%20can%20be%20sped%20up%20if%20you%20add%20powdered%20or%20liquid%20pectin%20from%20the%20store,%20BUT%20I%20am%20all%20about%20the%20good%20old%20fashioned%20way%20of%20doing%20it.%20%20The%20way%20it%20was%20done%20before%20you%20could%20buy%20pectin%20in%20a%20box,%20or%20pouch,%20from%20the%20grocery%20store.%20%20You%20see,%20the%20membranes%20and%20pips%20of%20the%20orange%20contain%20a%20significant%20amount%20of%20pectin.%20%20So%20I%20am%20boiling%20and%20soaking%20them%20to%20release%20as%20much%20pectin%20as%20possible%20in%20order%20to%20achieve%20a%20good%20set%20on%20my%20marmalade.%20%20I%20feel%20that%20it%20will%20give%20my%20marmalade%20a%20more%20authentic%20flavor.%20%20Then%20again,%20maybe%20not....%20Who%20knows,%20it's%20not%20like%20store%20bought%20pectin%20actually%20tastes%20like%20the%20apples%20that%20it%20is%20made%20from.%20%20So%20lets%20just%20call%20it%20an%20OCD%20moment%20and%20leave%20it%20at%20that.%20:)%3C/p%3E%3Cp%3EI%20am%20breaking%20the%20post%20up%20into%202%20parts,%20simply%20because%20of%20the%20wait%20time%20on%20the%20pectin%20transfusion.%3C/p%3E%3Cp%3ESo%20let's%20get%20started,%20cause%20day%201%20takes%20the%20most%20effort........%3C/p%3E%3Cp%3E1-2%20cups%20Orange%20Blossom%20Honey%20(this%20will%20be%20determined%20by%20the%20amount%20of%20liquid%20you%20have%20left%20over%20after%20you%20simmer%20the%20juice%20and%20zest%20together%20with%20the%20membranes)%3C/p%3E%3Cp%3E1-2%20cups%20Granulated%20Sugar%20(again,%20this%20will%20be%20determined%20by%20the%20amount%20of%20liquid%20you%20have%20left%20over%20after%20you%20simmer%20the%20juice%20and%20zest%20together%20with%20the%20membranes)%3C/p%3E%3Cp%3EBegin%20by%20removing%20the%20peel%20from%20the%20Blood%20Oranges%20with%20a%20vegetable%20peeler.%20(this%20will%20take%20off%20the%20outer%20layer%20and%20leave%20most%20of%20the%20pith%20behind....%20The%20pith%20is%20bitter,%20so%20you%20don't%20want%20that%20part.)%3C/p%3E%3Cp%3ENext,%20julienne%20the%20peelings%20to%20your%20chosen%20size.%20(I%20like%20mine%20very%20finely%20julienne,%20you%20can%20opt%20for%20simply%20chopping%20if%20you%20like,%20or%20mincing,%20or%20dicing,%20or%20matchsticks...%20Your%20choice)%3C/p%3E%3Cp%3EThis%20is%20the%20part%20that%20takes%20the%20most%20time....%20because%20I%20wanted%20my%20strands%20of%20peel%20to%20be%20super%20fine.%3C/p%3E%3Cp%3EYou%20should%20end%20up%20with%20about%202%20cups%20worth%20of%20Blood%20Orange%20Zest.%3C/p%3E%3Cp%3EPlace%20the%20julienne%20zest%20into%20a%20medium%20pot%20and%20cover%20with%20about%206%20cups%20of%20water.%3C/p%3E%3Cp%3EBring%20to%20a%20boil,%20then%20simmer%20for%201%20hour.%3C/p%3E%3Cp%3EWhile%20the%20zest%20is%20simmering,%20begin%20juicing%20the%20Blood%20Oranges%20and%20the%20Lemons.%20(be%20very%20careful%20with%20the%20Blood%20Oranges,%20the%20pith%20is%20much%20more%20delicate%20and%20they%20will%20rip%20and%20tear%20very%20easily)%3C/p%3E%3Cp%3EFilter%20the%20juice%20into%20a%20measuring%20cup,%20reserving%20the%20pulp.%3C/p%3E%3Cp%3EYour%20should%20have%202%20cups%20worth%20of%20juice.%3C/p%3E%3Cp%3ENext,%20begin%20scraping%20the%20remaining%20membranes%20or%20the%20Blood%20Oranges,%20as%20well%20as%20the%20Lemons,%20away%20from%20the%20piths%20using%20a%20knife%20or%20a%20spoon;%20whichever%20is%20easiest%20for%20you.%3C/p%3E%3Cp%3EPlace%20all%20the%20scraped%20membranes,%20pips%20and%20the%20pulp%20you%20strained%20out%20of%20the%20juice%20into%20a%20large%20doubled%20square%20of%20cheese%20cloth.%3C/p%3E%3Cp%3ETie%20the%20cheese%20cloth%20into%20a%20nice%20little%20bundle%20with%20kitchen%20twine.%3C/p%3E%3Cp%3EThe%20zest%20should%20be%20done%20cooking%20by%20now,%20so%20strain%20it%20and%20reserve%20the%20liquid.%20%20(You%20should%20have%20about%204%20cups.)%3C/p%3E%3Cp%3EAdd%204%20cups%20of%20the%20zest%20liquid,%20along%20with%20the%20zest,%20into%20a%20large%20pot.%3C/p%3E%3Cp%3EAdd%20the%20strained%20juice.%3C/p%3E%3Cp%3EPlace%20the%20bundle%20of%20membranes,%20pips%20and%20pulp%20into%20the%20pot%20as%20well.%3C/p%3E%3Cp%3EBring%20to%20a%20boil,%20and%20simmer%20for%20an%20additional%2030%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20the%20heat%20and%20cover....%20letting%20it%20sit%20for%208-12%20hours%20and%20allow%20as%20much%20pectin%20as%20possible%20to%20permeate%20the%20liquid.%3C/p%3E%3Cp%3EAnd%20that%20is%20the%20first%20part....%20%20%20Whew!%3C/p%3E%3Cp%3EStay%20tuned%20for%20Day%202%20when%20we%20turn%20this%20sticky%20messy%20Blood%20Orange%20Soup%20into%20beautiful%20jars%20full%20of%20sunshine.%3C/p%3E%3Cp%3EMangia!!%3C/p%3E){kind=link}
