- 1 1/2 tablespoons Dijon mustard
- 3/4 cup olive oil (original recipe calls for grapeseed oil, but I was fresh out!)
- 3 tablespoons fresh lemon juice
- kosher salt and freshly ground black pepper, to taste
- 1 large celery root or 2 medium, peeled
- 2 tablespoons minced flat-leaf parsley
