- 4 cloves garlic, crushed and chopped
- 1/2 large white onion, diced
- 1 inch piece ginger, chopped finely
- 2 birdsâ-eye, or other hot green pepper like serrano, chiles, finely chopped
- 1 teaspoon each of ground cumin and ground coriander
- 1/2 teaspoon each of ground turmeric and ground cayenne pepper
- 1/3 of a 12oz can whole tomatoes, roughly chopped or pulled apart
- 1/2lb fresh (or frozen) shelled peas
- 4 tablespoons julienned cilantro (coriander)
