Receta Cheese Spinach Stuffed Manicotti

Ingredientes
- 12 x manicotti shells
- 1 c. fat-free ricotta cheese
- 1 pkt Mori-Nu Lite Tofu, extra-hard
- 1 pkt spinach, minced fine
- 4 Tbsp. onion, minced fine
- 1 x (26-ounce.) jar of pasta sauce
Direcciones
- Cook manicotti shells according to package directions. Place the tofu in food processor and process well to creamy consistency, pour into large mixing bowl.
- Add in ricotta cheese, spinach (thawed and well liquid removed), and onion. Mix well.
- Place in pastry tube and fill manicotti shells. Put small amount of sauce on bottom of baking dish, place stuffed manicotti shells on top. Pour small amount of sauce over the tops of shells. Set extra sauce aside to be heated and served over the finished dish. Cover baking dish and and place in 350 degree oven for 30-40 min. Serve with additional sauce, garnish with fresh parsley or possibly basil.
- Serve with leafy salad or possibly vegetable of choice and warm crusty bread.
- Serves 6.
