%3C/p%3E%3Cp%3EAlthough%20they%E2%80%99re%20reporting%20that%20the%20storm%20wasn%E2%80%99t%20enough%20to%20re-fill%20the%20state%E2%80%99s%20dried-up%20reservoirs,%20those%20few%20days%20of%20rain%20were%20still%20good%20news%20for%20California.%20And%20bad%20news%20for%20my%20car.%3C/p%3E%3Cp%3EFor%20some%20reason%20that%20none%20of%20the%20various%20mechanics%20I%E2%80%99ve%20taken%20it%20to%20can%20figure%20out,%20my%20car%20seems%20to%20hate%20the%20rain.%3C/p%3E%3Cp%3EUnfortunately%20the%20rainstorm%20followed%20an%20exhausting%20dissertation%20week%E2%80%94when%20I%E2%80%99d%20still%20managed%20to%20do%20quite%20a%20bit%20of%20cooking%E2%80%94so%20it%20was%20one%20of%20those%20lazy%20weekends%20when%20Paula%20and%20I%20both%20wanted%20to%20throw%20in%20the%20kitchen%20towel%20and%20just%20go%20out%20for%20brunch.%3C/p%3E%3Cp%3EBut%20of%20course%20we%20couldn%E2%80%99t%20drive%20anywhere%20in%20the%20rain%20without%20my%20car%20threatening%20to%20die.%20Good%20thing%20we%20had%20this%20brunch-worthy%20recipe%20up%20our%20sleeves.%3C/p%3E%3Cp%3EThis%20is%20a%20pretty%20standard%20brunch%20combination%E2%80%94crispy%20potatoes%20and%20eggs%E2%80%94just%20fancied%20up%20in%20a%20few%20little%20ways.%3C/p%3E%3Cp%3ESweet%20bell%20pepper%20is%20tossed%20in%20among%20the%20potatoes,%20which%20are%20seasoned%20with%20salt,%20pepper,%20and%20scallions.%20A%20sprinkling%20of%20cheese%20is%20melted%20over%20the%20crisp%20potatoes%20the%20second%20they%E2%80%99re%20plated.%20And%20instead%20of%20serving%20it%20alongside%20a%20fried%20egg%20or%20two,%20with%20toast,%20the%20eggs%20are%20served%20directly%20on%20top%20of%20the%20cheesy%20potato%20hash.%20(Dare%20I%20say%20it,%20eliminating%20the%20need%20for%20toast%20altogether!?)%3C/p%3E%3Cp%3EIt%E2%80%99s%20the%20perfect%20breakfast%20dish%20for%20when%20we%20don%E2%80%99t%20have%20bread%20in%20the%20house.%20Of%20course,%20if%20you%E2%80%99ve%20been%20reading%20Paula%E2%80%99s%20bread%20posts%20here%20for%20a%20while%20now,%20you%20might%20think%20that%20happens%E2%80%A6%20never.%20But%20actually%20she%20doesn%E2%80%99t%20make%20us%20bread%20every%20weekend,%20and%20her%20weekend%20bread%20doesn%E2%80%99t%20last%20all%20week%20(unless%20it%E2%80%99s%20a%20giant%20sourdough%20rye%20boule).%3C/p%3E%3Cp%3EBut%20the%20real%20reason%20we%20often%20don%E2%80%99t%20have%20bread%20in%20the%20house?%20Since%20Paula%20started%20baking%20her%20own%20bread,%20she%E2%80%99s%20sworn%20off%20storebought%20bread%20completely,%20so%20I%20am%20no%20longer%20allowed%20to%20buy%20any.%3C/p%3E%3Cp%3EEven%20if%20I%20could%20have%20driven%20to%20the%20grocery%20store%E2%80%A6%3C/p%3E%3Cp%3EIt%20was%20actually%20kind%20of%20nice%20to%20be%20home-bound%20last%20weekend,%20getting%20to%20stay%20inside%20and%20enjoy%20watching%20and%20listening%20to%20the%20rain.%3C/p%3E%3Cp%3EWhile%20that%20car%20should%20be%20just%20as%20grateful%20for%20the%20free%20carwash%20as%20I%20am,%20instead%20it%20protests%20any%20recent%20rainstorm%20by%20stuttering%20and%20shuddering%20every%20time%20I%20brake%20or%20idle%20it.%20(Which%20of%20course%20makes%20me%20nervous%20every%20single%20time%20I%20stop%20at%20a%20red%20light,%20just%20in%20case%20it%20refuses%20to%20start%20back%20up%20again.)%3C/p%3E%3Cp%3EI%20really%20thought%20I%E2%80%99d%20finally%20fixed%20it%20last%20April%20since%20it%E2%80%99s%20been%20behaving%20perfectly%20since%20then!%20But%20I%20guess%20that%20was%20all%20an%20illusion,%20thanks%20to%20California%E2%80%99s%20drought.%3C/p%3E%3Cp%3EAs%20basic%20at%20it%20seems,%20this%20is%20something%20I%E2%80%99ve%20ordered%20a%20million%20times%20at%20my%20favorite%20brunch%20spot%20in%20Santa%20Barbara,%20so%20it%E2%80%99s%20a%20meal%20that%20I%20think%20of%20as%20a%20treat%20when%20I%20make%20it%20for%20myself%20at%20home.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20always%20use%20bell%20peppers,%20but%20they%20add%20a%20sweet,%20juicy%20crunch%20to%20an%20otherwise%20savory,%20spicy%20dish.%20And%20I%20was%20too%20hungry%20to%20show%20you%20here,%20but%20I%20love%20the%20way%20the%20runny%20egg%20yolks%20break%20over%20the%20crispy%20potatoes,%20and%20the%20way%20the%20potatoes%20sop%20up%20the%20yolk%20almost%20as%20well%20as%20if%20they%20were%20bread.%3C/p%3E%3Cp%3EOh%20and%20if%20you%E2%80%99re%20curious,%20the%20photos%20are%20all%20from%20a%20previous%20week%E2%80%94believe%20me,%20we%20didn%E2%80%99t%20see%20the%20sun%20this%20past%20weekend!%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3ECheesy%20Skillet%20Potatoes%20and%20Eggs%3C/p%3E%3Cp%3E(Serves%202)%3C/p%3E%3Cp%3EActive%20time:%2025%20minutes;%20Total%20time:%2035%20minutes.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Heat%20about%202%20Tbsp.%20of%20olive%20oil%20in%20a%20skillet%20over%20medium%20heat%20until%20shimmering,%20then%20add%20the%20diced%20potatoes.%20(If%20you%E2%80%99re%20doubling%20or%20increasing%20the%20recipe%20at%20all,%20make%20sure%20there%E2%80%99s%20enough%20room%20to%20spread%20the
