Ingredientes
- 1 1/2 cups all-purpose flour
- 1/2 tsp. salt
- 1/2 cup (1 stick) butter, softened
- 1/2 cups sugar
- 2 eggs
- 1/2 tsp. vanilla extract
- 1/8 tsp. almond extract (eliminate if making anything other than cherry)
- For the Drizzle:
- 1 oz cream cheese
- 1 oz butter
- 3/4 cup powdered sugar
- 1/4 tsp almond extract (use vanilla for anything other than cherry)
- 2-4 Tbsp. milk

%20I%20don%E2%80%99t%20recall%20a%20lot%20of%20pie%20baking%20as%20I%20was%20growing%20up.%20My%20mother%20would%20more%20than%20likely%20make%20something%20closer%20to%20these%20Cherry%20Pie%20Bars%20using%20a%20can%20of%20cherry%20pie%20filling.%20Not%20that%20I%20blame%20her.%20Six%20kids?%20Oh%20my.%3C/p%3E%3Cp%3EI%E2%80%99ve%20been%20using%20this%20recipe%20for%20more%20years%20than%20I%20can%20remember;%20while%20I%20might%20have%20tried%20my%20hand%20at%20making%20pies%20more%20often%20than%20my%20mom,%20I%20brought%20the%20single%20mom%20card%20to%20the%20table%20and%20that%20seldom%20left%20enough%20time%20for%20homemade%20pies%20for%20anything%20other%20than%20Thanksgiving.%20Enter%20these%20pie%20bars%20that%20I%20could%20do%20more%20easily%20and%20quickly.%20A%20cakey/shortbread%20type%20batter%20is%20covered%20with%20cherry%20pie%20filling%20(check%20out%20my%20homemade%20version%20shown%20above),%20dotted%20with%20a%20bit%20more%20batter%20and%20then%20finished%20after%20cooling%20with%20my%20updated%20drizzle%20which%20includes%20some%20cream%20cheese%20and%20butter.%20I%E2%80%99ve%20always%20thought%20they%20were%20a%20nice%20little%20treat%20but%20my%20friends%20who%20were%20here%20with%20me%20yesterday%20raved%20about%20them%20and%20you%20know%20what;%20they%E2%80%99re%20right.%20ESPECIALLY%20if%20you%20use%20fresh%20fruit.%20My%20friends%20Sandy%20and%20Ansh%20spent%20the%20day%20with%20me%20making%20peach%20pies%20but%20eating%20these.%20Well%20we%20ate%20a%20lot%20of%20stuff%20but%20these%20were%20definitely%20a%20hit!%3C/p%3E%3Cp%3EI%20used%20cherries%20to%20make%20cherry%20pie%20bars%20but%20would%20easily%20substitute%20blueberries%20or%20peaches%20in%20the%20recipe;%20as%20a%20matter%20of%20fact%20it%20would%20be%20fabulous%20with%20almost%20any%20summer%20fruit;%20make%20one%20before%20they%E2%80%99re%20all%20gone.%20Hurry!%3C/p%3E%3Cp%3ECherry%20Pie%20Bars%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20bars:%3C/p%3E%3Cp%3EFor%20Assembly:%3C/p%3E%3Cp%3E4%20cups%20cherry%20pie%20filling%20(One%20full%20recipe%20of%20my%20homemade%20version).%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Grease%20an%208x8%22%20pan%20with%20butter.%3C/p%3E%3Cp%3ECombine%20flour%20and%20salt%20in%20a%20bowl%20and%20whisk.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20together%20butter%20and%20sugar.%3C/p%3E%3Cp%3EAdd%20eggs%20and%20extracts%20and%20beat%20well.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20to%20the%20creamed%20mixture%20and%20mix%20until%20combined.%3C/p%3E%3Cp%3ESpread%201%201/2%20cups%20batter%20into%20bottom%20of%20the%20pan%20(mixture%20is%20thick).%3C/p%3E%3Cp%3ETop%20with%20pie%20filling.%20Drop%20remaining%20batter%20by%20the%20tablespoon%20on%20top%20of%20the%20pie%20filling.%3C/p%3E%3Cp%3EBake%20at%20350%20for%2030-35%20minutes%20or%20until%20toothpick%20inserted%20in%20dough%20comes%20out%20clean.%20Cool.%3C/p%3E%3Cp%3EFor%20the%20Cream%20Cheese%20Drizzle:%3C/p%3E%3Cp%3EBeat%20cream%20cheese%20and%20butter%20together.%20Add%20powdered%20sugar%20and%20mix%20gently.%20Add%20almond%20extract%20and%20beat%20to%20combine.%20Add%20milk%20a%20tablespoon%20at%20a%20time%20until%20the%20right%20consistency;%20it%20should%20be%20a%20bit%20runny,%20not%20firm..%3C/p%3E%3Cp%3EDrizzle%20over%20cooled%20bars%20(I%20put%20the%20frosting%20into%20a%20Ziploc%20bag%20and%20cut%20a%20small%20tip%20off%20a%20corner%20and%20used%20it%20as%20a%20pastry%20bag).%3C/p%3E%3Cp%3E2.5%3C/p%3E%3Cp%3Ehttp://www.creative-culinary.com/cherry-pie-bars/%3C/p%3E%3Cp%3EThis%20recipe%20brought%20to%20you%20by%20Creative%20Culinary%20%7C%20A%20Food%20and%20Cocktail%20Blog%20%7C%20Website:%20www.creative-culinary.com%3C/p%3E){kind=link}
