%3C/p%3E%3Cp%3ETater%20Jack%20is%20similar%20to%20Latkes%20a%20Yiddish%20potato%20patty%20but%20with%20a%20slight%20difference.%20%20In%20Tater%20Jack%20you%20don't%20use%20any%20flour%20or%20corn%20starch%3C/p%3E%3Cp%3E1.%20%20Take%202%20medium%20sized%20unpeeled%20potatoes%20and%20boil%20them%20in%20a%20pan%20of%20water%20until%20done.%20%20You%20can%20nuke%20them%20in%20the%20microwave%20or%20bake%20them%20in%20the%20oven%20but%20boiling%20is%20better.%3C/p%3E%3Cp%3E2.%20%20Mash%20the%20potatoes%20in%20a%20bowl,%20skins%20and%20all.%3C/p%3E%3Cp%3E3.%20%20Add%20just%20enough%20buttermilk%20and%20mix%20until%20everything%20is%20the%20consistency%20of%20paste.%3C/p%3E%3Cp%3E4.%20%20Preheat%20a%20skillet%20with%20oil%20for%20about%2010%20minutes%20on%20medium%20heat.%20%20Bacon%20drippings%20also%20work%20really%20well.%3C/p%3E%3Cp%3E5.%20%20When%20the%20pan%20is%20hot,%20spoon%20out%20the%20desired%20size%20patty%20in%20the%20skillet%20and%20let%20them%20cook%20for%20about%2010-12%20minutes,%20flip%20them%20over%20and%20cook%20another%2010-12%20minutes.%20%20If%20you%20add%20cheese%20or%20onion,%20allow%203%20minutes%20more%20for%20cooking.%20%20When%20done%20the%20Tater%20Jacks%20should%20have%20a%20golden%20brown%20crust.%20%20Serve%20up%20with%20the%20toppings%20or%20condiments%20of%20your%20choice%20-%20sour%20cream%20works%20great.%3C/p%3E%3Cp%3EChick%20and%20the%20Homestead%20Chickens%20of%20Grymme%20Creek%20Hollow%20-%20Review%20by%20Martha%20A.%20Cheves,%20Author%20of%20Stir,%20Laugh,%20Repeat;%20Think%20With%20Your%20Taste%20Buds;%20A%20Book%20and%20A%20Dish%3C/p%3E%3Cp%3EMany%20years%20ago%20a%20young%20man%20from%20the%20city%20decided%20to%20be%20a%20pioneer%20so%20he%20loaded%20up%20his%20belongings%20and%20started%20a%20homestead%20in%20Grymme%20Creek%20Hollow%20which,%20by%20the%20way,%20was%20in%20the%20Ouachita%20Mountains.%20%20It%20didin't%20take%20long%20for%20the%20young%20man%20to%20decide%20this%20wasn't%20for%20him%20so%20he%20packed%20up%20his%20personal%20belongings%20and%20moved%20back%20to%20the%20city.%20%20Legend%20has%20it%20that%20the%20chickens%20he%20left%20behind%20decided%20to%20make%20their%20own%20homestead%20out%20of%20what%20was%20left%20behind.%20%20These%20chickens%20became%20the%20Homestead%20Chickens%20of%20Grymme%20Creek%20Hollow.%3C/p%3E%3Cp%3EThe%20homestead%20chickens%20were%20divided%20up%20into%20family%20groups%20known%20as%20broods.%20%20In%20each%20brook%20there%20was%20a%20Mother%20Hen%20who%20was%20in%20charge.%20%20The%20roosters%20in%20the%20brood%20were%20not%20in%20charge....%20Among%20some%20of%20the%20more%20influential%20broods%20of%20the%20homestead%20were%20Midhens%20which%20were%20a%20combination%20of%20killer%20security%20guards%20and%20nannies.%20%20The%20leader%20was%20the%20Superior%20Mother%20Hen%20-%20Hypatia%20Rosecomb.%20%20She%20is%20advised%20by%20a%20group%20of%20Mother%20Hens%20which%20make%20up%20the%20Council%20of%20Aunties.%20%20There%20were%20also%20different%20classes%20of%20chickens%20which%20determined%20their%20pecking%20order.%20%20Like%20most,%20there%20were%20the%20upper%20class%20chickens%20and%20there%20were%20the%20lowerclass%20which%20were%20called%20coopies%20or%20coop%20chickens.%3C/p%3E%3Cp%3EThe%20Pinfeathers%20family%20was%20the%20smallest%20and%20poorest%20chickens%20of%20the%20coop.%20%20They%20were%20June%20Pinefeather,%20the%20Mother%20Hen;%20Walter%20Pinfeather,%20her%20rooster;%20and%20of%20course%20their%20chick%20which%20they%20named%20Chick.%20%20Chick%20was%20a%20born%20explorer.%20%20Nothing%20amused%20him%20more%20than%20running%20around%20investigating%20everything%20that%20made%20up%20the%20homestead,%20even%20if%20it%20took%20him%20to%20the%20outskirts%20of%20the%20upperclass.%20%20But%20his%20real%20trouble%20came%20when%20he%20spotted%20a%20chick%20younger%20than%20him%20being%20bullied%20by%20another%20chick.%20%20His%20defense%20of%20this%20chick,%20named%20Peq,%20brought%20the%20anger%20of%20the%20bully's%20mother%20who%20just%20happened%20to%20be%20Aunty%20Hysidia,%20the%202nd%20most%20powerful%20Aunty%20in%20the%20Council.%20%20Second%20only%20to%20the%20Superior%20Mother%20Hen.%20%20Her%20anger%20has%20her%20pressing%20charges%20against%20Chick's%20father%20Walter%20for%20what%20boils%20down%20to%20theft%20and%20treason.%3C/p%3E%3Cp%3EI%20read%20a%20lot%20of%20books%20but%20this%20book%20is%20one%20that%20I%20can't%20say%20enough%20about.%20%20We%20spend%20our%20lives%20hearing%20about%20bullying,%20discrimination,%20politics,%20and%20everyday%20life%20in%20general,%20but%20after%20a%20while%20it%20just%20becomes%20words%20that%20we%20hear%20but%20don't%20listen%20to.%20%20As%20I%20read%20Chick%20and%20the%20Homestead%20Chickens%20I%20would%20be%20reminded%20of%20things%20happening%20around%20me.%20%20As%20Peq%20is%20bullied%20I%20pictured%20the%20kids%20on%20the%20news%20that%20attempted%20to%20kill%20their%20friend.%20%20As%20I%20read%20about%20the%20order%20of%20the%20broods,%20I%20pictured%20the%20different%20housing%20districts%20we%20have%20within%20every%20city.%20%20As%20I%20read%20about%20the%20Aunty%20Council,%20I%20pictured%20the%20court%20systems%20we%20have%20in%20effect.%20%20And%20as%20I%20read%20about%20the%20Superior%20Mother%20Hen,%20I%20pictured%20our%20presidents%20and%20their%20cabinets.%20%20This%20book,%20which%20made%20me%20laugh%20also%20made%20me%20pay%20attention%20to%20my%20own%20surroundings.%20%20This%20is%20a%20book%20that%20can%20be%20read%20by%20those%20of%20all%20ages%20and%20they%20will%20all%20learn%20something%20from%20it.%20%20OH%20YEAH!%20%20You%20do%20realize%20I%20learned%20this%20from%20a%20Chicken!%20%20Great%20Book!%3C/p%3E){kind=link}
