  • 2 Tbsp. extra-virgin extra virgin olive oil - (to 3)
  • 2 lrg onions sliced
  • 10 sm boiling potatoes peeled
  • 3 x carrots cut up if large
  • 1 c. lentils
  • 1 x chicken - (abt 4 lbs) cut serving pcs, and skinned if you like
  • 3 Tbsp. minced cilantro
  • 4 x dates - (to 6) pitted Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. sugar
  • 6 c. water

Direcciones

  1. Heat the oven to 225 degrees.
  2. Place the oil in an 8-qt pot. Add in the onions, potatoes, carrots, lentils, chicken, cilantro, dates, and salt and pepper to taste.
  3. Heat the sugar in a small skillet over medium heat till melted and dark brown but not burned. Add in to the pot. Add in sufficient water to cover the ingredients and bring to a boil over high heat.
  4. Cover the pot and place in the oven. Bake 6 hrs, then test for seasonings and add in more salt and pepper if you like. Bake, covered, 6 hrs longer.
  5. This recipe yields 8 servings.
