  1. Combine the chicken, soy sauce (1), dry sherry, eggs, cornstarch (1), and vegetable oil (1). Marinate the chicken under refrigeration overnight.
  2. Heat the deep fryer to 365 F. Remove the chicken from the marinade and oil blanch the chicken in the deep fryer, in small batches for 1 to 1 1/2 mintes until browned and a light crust is formed.
  3. Heat the oil (2) until it lightly smokes. Add the broccoli, jalapenos, garlic, green onions, and salt. Stir fry until fragrant.
  4. Add soy sauce, sugar, sesmae oil, and vinegar. Bring to a simmer and reduce heat.
  5. Combine the cornstarch (2) with the water to form a paste. Add to the sauce and while stirring sook until thickened.
  6. Add chicken to the sauce. Combine well, then return to a simmer.
  7. Remove from heat and serve.
